This month, we’ll make keto shortbread cookies. With everyone spending a little extra time at home, there is no better way to fill your time than baking! These cookies are simple to make, only using 4 ingredients. You can even add your own touch by dipping them in sugar-free chocolate, as I did 🙂

0I really enjoyed these cookies as I love traditional shortbread cookies and these tasted very much like the real thing. I did not have erythritol so I substituted with “Sweet Luv” which I use often and that worked out really well. Next time I will try adding some chocolate but I don’t think it is necessary at all. Thanks for the great recipes!

0I was so excited to find the shortbread cookies and could not wait to try them! And I was NOT disappointed – they are wonderful! I’m making another batch today and will use them as the “crust” for mini chocolate pies using the sugar-free pudding!
