I’m a firm believer that everyone needs a good keto microwave bread recipe in their back pocket. I think my microwave coconut flour bread is it! It takes just 90 seconds in the microwave. Many of you that saw my other keto 90-second bread recipe have asked me for a nut-free version – well, this keto bread with coconut flour is the answer! And, this low carb microwave bread is made from good-for-you ingredients like flax seed meal and hemp seeds.

Not only is it keto, but it’s got good fats from the flax seed and hemp seeds and plenty of protein and fiber from the coconut flour. It makes a filling slice of bread, that’s for sure.

How To Make Keto Microwave Bread Recipe With Coconut Flour
I’m going to show you how to make keto bread in microwave – it couldn’t be easier!
- Melt the butter and mix all of the ingredients (coconut flour, golden flax seed meal, 3 types of seeds, egg and coconut milk beverage) into a small ramekin. (It’s just like a keto mug bread.)
- Smooth out the top, and sprinkle with seeds (this step is optional, but it adds a nice crunch.)
- Then we microwave! 90 second keto bread takes… you guessed it! 90 seconds.

- Run a knife around the edges, and the keto microwave bread should pop right out.
Is There Any Bread You Can Eat On A Low Carb Diet?
Yes, there are some breads you can eat on a low carb lifestyle. But it needs to be a low carb bread or keto bread recipe… like this one! I’ve got a ton of keto low carb bread recipes for you to try.
This low carb microwave bread is made with keto-approved ingredients and has just 4 grams net carbs per serving.
What Is Keto Bread?
This keto low carb microwave bread is made from a variety of keto-friendly ingredients:
- Coconut flour
- Golden flax seed meal
- Hemp seeds
- Sunflower seeds
- Sesame seeds
- Egg
- Unsweetened coconut milk beverage – or any milk you like (like almond milk if you’re not nut-free), but note that dairy milk will have sugar in the form of lactose.
How To Store Keto Bread With Coconut Flour
You can keep it on the counter for about a day, in the fridge for about a week, or freeze for longer. You can even use multiple ramekins to make it in bulk, and freeze. That way, you’ll always have keto bread with coconut flour on hand. Just toast and eat!
How To Freeze Low Carb Microwave Bread
If you’d like to freeze this low carb microwave bread, simply slice into pieces and place a sheet of parchment paper in between the slices. Store in a plastic freezer bag.
When you’re ready to eat your microwave coconut flour bread, toast until warm and golden brown.
How To Serve Microwave Keto Bread
You can use keto bread in most ways that you’d use regular bread! Here are some ideas for toppings:
- Grass-fed butter
- Nut butter
- Sugar-free strawberry chia jam – I also sprinkled some hemp seeds on top, pictured above!
- Turkey sandwich – avocado oil mayo + same sandwich fillings I use for cucumber subs!
- Keto grilled cheese (yum!)
- Mini keto pizza – simply toast and top with marinara sauce, cheese, and any other pizza toppings
- Keto low carb chicken salad
- Avocado tuna salad

Melt the butter in a 4-ounce (118 mL) ramekin.

Stir in the remaining ingredients. Keep stirring and pressing with the back of a spoon until the batter is fully incorporated and thick enough to be spreadable. Flatten and smooth the top with the back of the spoon. (You can top with more seeds if desired - this is optional.)

Microwave cooking method: Microwave for 90 seconds, until set and spring-y on top.
Oven cooking method: Preheat the oven to 350 degrees F (177 degrees C). Bake for about 15 minutes, until set and spring-y on top.

Run a knife along the edge and flip over a plate or paper towel to release. Slice into 3 slices.

I thought I had left a review for this weeks ago but see that I have not. This is absolutely the best bread, let alone mug-bread that I’ve tried. Absolutely perfect! I got a bit creative this evening with it and added a tablespoon of nutritional yeast since I just wanted it toasted on its own with a little bit of butter. If you’re leaning more towards savory for this than sweet it was perfect…just a slight cheesy taste. I ate the whole thing for my dinner along with some steamed vegetables. Delicious! Thank you for such a wonderful recipe!

Yum! I usually make several batches of the dry ingredients, store them in the ramekins (with lids). When I want a quick bite of bread, I add the wet ingredients. Fast and good!

Absolutely delicious! My first time using hemp seeds (called hemp hearts at my grocery store.) I think my large egg must have been oversized because I had to add more coconut flour, which I did in 1/8 tsp increments until I judged the batter to be thick enough. I’ve tried several mug bread recipes using almond flour, and while I like it, I think the coconut flour comes closer to true bread texture. It’s going to be my first choice from now on.

I like to make this bread for my nephew, who is allergic to dairy. I’ve been making it for many months now and I love it. He can eat coconut, just not the butter.

I just made this and it’s DELICIOUS!!! I did not have sesame seeds so I substituted for chia. I used 1 TBSP heavy cream instead of coconut milk. My ramekin dish was a bit small so the bread rose over the edge, but still really good! Thank you!
