Ingredients

Salad

  • 5 oz Spring mix
  • 1 cup Blueberries
  • 1/2 cup Walnuts (chopped, preferably toasted)
  • 1/2 cup Goat cheese (crumbled)

Blueberry Vinaigrette

  • 1/4 cup Olive oil
  • 1 tbsp Apple cider vinegar
  • 3 tbsp Blueberries
  • Powdered erythritol (or any sweetener to taste - optional)*
  • Sea salt (to taste)
  • Black pepper (to taste)

Instructions

  1. To make the dressing, puree all ingredients in a blender until smooth. (*See note about sweetness.)
  2. Place all salad ingredients in a large bowl. Toss with the dressing.

Recipe Notes

Erythritol, which is my favorite sugar-free sweetener, is listed as an optional ingredient, but is not required. I like to use about a teaspoon of the powdered kind, for light sweetness and smooth texture. Otherwise, the blueberry vinaigrette is only slightly sweet from the blueberries. If you prefer a sweeter dressing, feel free to add a bit of your favorite sweetener to taste.
