Ingredients

  • 1 recipe Coconut flour pie crust (or any crust you like)
  • 2 lb Strawberries (fresh or frozen)
  • 1 cup Powdered erythritol (or any sweetener of choice)
  • 3 tbsp Vital Proteins Grass-Fed Gelatin
  • 1/2 cup Water
  • 2 tbsp Lemon juice

Instructions

  1. Meanwhile, in a large saucepan over medium heat, simmer the strawberries with powdered erythritol for about 15 minutes, until strawberries are soft. Stir occasionally.

  2. While strawberries simmer, whisk together the gelatin, water, and lemon juice in a small bowl. Let sit for a couple minutes to thicken.

  3. Whisk the gelatin mixture into the strawberries. Simmer for a couple minutes, stirring/whisking until the gelatin dissolves.

  4. Let the strawberry filling and pie crust cool separately for 20 minutes.

  5. Pour the strawberry filling into the baked pie crust. Cool on the counter, then refrigerate overnight to set. Garnish with whipped cream and fresh strawberries to serve.
