Lightly oil a large non-stick skillet or pancake griddle. Preheat by placing over medium heat on the stove for a couple of minutes. (It's ready when a drop of water added to the pan sizzles.)
In a large bowl, whisk together Wholesome Yum Keto Pancake Mix, eggs, milk, oil, and banana extract until completely smooth and no lumps remain.
Using a spatula, fold in the chopped walnuts.
Pour the batter onto the griddle 1/8 cup (2 tablespoons) at a time. Cook for 60-90 seconds, until pancakes are golden on the bottom and bubbles form on the top. Flip and cook for 60-90 seconds.
Serving size: 5 3-inch pancakes, 1/4 of entire recipe
