In a medium bowl, whisk all batter ingredients together, until smooth.
Heat avocado oil in a large skillet over medium-low heat for a couple of minutes, until the oil shimmers.
Meanwhile, pour the pancake batter into a piping bag with a small tip. Once the oil is shimmery, quickly pipe small coin-sized circles of batter onto the hot pan, holding the tip sideways to prevent the batter from running out too quickly. Cook for 1 to 2 minutes, until the edges are dry and they are browned underneath. Carefully and quickly flip the pancakes, and cook for another 30 seconds to 1 minute, until browned on the other side. Repeat with remaining batter (typically 2-3 batches, depending on the size of your pan).
Serving size: 3/4 cup, or 1/5 entire recipe
