This is the best zucchini pizza bites recipe for many reasons! It tastes delicious, is packed with veggies, AND takes just 20 minutes to make. Here’s how we make them:
- Roast zucchini rounds. Arrange zucchini slices in a single layer on a prepared baking sheet. Spray with avocado oil spray and sprinkle with salt and pepper. Bake until just crisp-tender, about 5 minutes.
- Top your mini zucchini pizzas. Top each slice with marinara sauce…
Followed by mozzarella cheese, Italian seasoning, and pepperoni quarter slices.
- Bake. Bake your mini pizza bites for about 8-10 minutes, until cheese is melted and zucchini is soft. Broil for 1-2 minutes to brown cheese. Serve immediately!

Preheat the oven to 400 degrees F (204 degrees C).

Line a baking sheet with foil or parchment paper. Arrange zucchini slices in a single layer on the sheet. Spray with avocado oil spray and sprinkle with sea salt and black pepper.

Bake for about 5 minutes, until zucchini just barely starts to soften.

Top each zucchini slice with 1/2 to 3/4 teaspoon marinara sauce, 1/2 tablespoon mozzarella cheese, a sprinkle of Italian seasoning, and 3-4 pepperoni quarter-slices.

Bake for 8-10 minutes, until cheese is melted and zucchini is soft.

Turn on the broiler. Place the pans closer to the broiler and broil for 1-3 minutes, until cheese is browned.

0This is a great appetizer, however, I prepared this as a side for dinner one night and my husband loved it! It’s so much more nutritious than regular pizza bites and has all the flavor. I try to review every recipe I use from wholesome yum. I love your recipes and can’t remember running across anything I haven’t liked.

0This sounds like a really fun way to do pizza. I usually don’t mind making a pizza crust, but sometimes it’s nice to have an easy change. I especially like your idea of doing it with Alfredo sauce in place of the marinara, because apart from fresh, I don’t care much for tomatoes. I just might put this on my next menu plan, since I’m always looking for good lunch ideas.

0I love this recipe. Made it tonight and it took exactly as much time as it did for my family to order their own carb-y pizza and pick it up. But, mine’s low carb and healthy! I plan to use this recipe often…when I either want more veggies, don’t want to make a keto pizza crust, or feel like a quick & simple pizza! It’s reminiscent of eggplant parmesan in flavor on some more tender bites. Taste delicious! Your instructions are spot on for timing and servings. Like another reviewer, I skipped the oil on the rounds. The salt I just added after putting on the sauce, and before adding the toppings. It still turned out well.
