I’m kind of obsessed with these kale chips, and that’s saying a lot considering I don’t even love kale that much. I originally created these when I came back from a trip overseas and missed the variety of veggies I normally eat at home. Here are the biggest reasons I keep coming back for more, especially in the fall and winter when kale is in season:
- Light, crispy texture – Unlike potato chips, kale chips have a much lighter, airy crunch. I find it so satisfying, without that heavy feeling. Just don’t expect them to be great for heavy dips, they always break on me with those.
- 10 flavors to choose from – This is probably the biggest reason I keep making this kale chips recipe. You’ll never get bored!
- Quick, healthy snack – Since the main ingredient is kale, these are naturally low carb, gluten-free, and packed with fiber. All in around half an hour.
I’ve since experimented with kale chips in the air fryer and dehydrator too, but I still make this baked version that I started with most often. It’s the fastest way to make a big batch. Make them with me!

Ingredients & Flavors
Here I explain the best ingredients for my kale chip recipe, what each one does, and substitution options. For measurements, see the recipe card.
At minimum, you’ll need kale, oil (I like either olive oil or avocado oil), and sea salt. You can choose what type of kale to get:
- Curly Kale – This is my fave, because the curls hold a bit more seasoning and get extra crispy.
- Lacinato Kale – Sometimes I see this called dinosaur kale or Tuscan kale. I like it a little less as the chips just come out flat, but it’s yummy in its own way because it’s a little sweeter.
The best part about kale chips is that you can customize them with different seasonings! If the plain version seems boring, try one of my favorite seasoning combos. I wrote amounts on the recipe card below!
- Pizza – Nutritional yeast (or I’ve done parmesan cheese), paprika, and sea salt.
- Mexican – Cumin, chili powder, and sea salt. I have this version pictured below!
- Italian – Italian seasoning, garlic powder, onion powder, and sea salt. Parm makes a nice addition to this one, too.
- Asian – Furikake and sea salt.
- Caribbean – Jerk seasoning and sea salt.
- Nacho Cheese – Cheddar cheese powder, cumin, galric powder, onion powder, chili powder, paprika, and sea salt.
- Flamin’ Hot – Cheddar cheese powder, hot sauce, garlic powder, and sea salt.
- Sour Cream and Onion – Buttermilk powder, onion powder, and dried parsley.
- Chili Lime – Lime juice, chili powder, and garlic powder.

How To Make Kale Chips
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Prep the kale. After washing and drying the kale, cut away the tough stems of each leaf. I have a picture of how to do this in my air fryer kale chips post. Chop into bite-sized pieces.
- Oil, massage, and season. Spread the kale on a baking sheet in a single layer. (You can use a good nonstick pan or line it with parchment paper for easier cleanup.) Drizzle with oil, massaging each piece until lightly coated with oil. Toss with any seasonings you like.
- Bake kale chips in the oven. I rotate the baking sheet halfway through, so they dry out evenly.



My Tips For Flavor & Texture
- Make sure the kale is completely dry. If it has some water left on it from washing, it won’t crisp up as well. I use my salad spinner (love that the bowl is glass and it’s large) and then pat the leaves dry with paper towels, just in case.
- How and why do I massage kale? It’s easier than it sounds — I just pick up bunches of kale with oil, squeeze, and repeat. This softens the leaves and removes bitterness, so your kale chips recipe turns out a little sweet and not bitter.
- Go light on the seasonings. They’ll taste more concentrated after baking, because the chips shrink. For most seasonings, I’ve found that the sweet spot is 1-2 teaspoons of seasoning (not including salt and pepper) per pound of kale.
- Feel free to oil and season the kale in a large bowl instead. I do find this a little easier than doing it on the sheet pan, but it’s an extra dish to wash, so I usually prefer the pan option.
- Make sure the leaves are arranged in a single layer. If they’re too crowded, the kale chips don’t crisp up. Cook in batches if they don’t fit on your largest pan! I’ve also had good results using two pans on different oven racks, as long as I swap and rotate them halfway through.
- Kale chips will crisp up more as they cool. While you can eat them right away, I like them better when they reach room temperature.

Instructions

Preheat the oven to 300 degrees F (149 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.

Wash kale and dry thoroughly. I recommend a salad spinner followed by paper towels. (Kale chips will take longer to crisp up if you don’t dry the kale well.)

Use a sharp knife to slice around the tough stem of each kale leaf. Discard stem. Roughly chop kale into bite-sized pieces.

Spread the kale leaves out onto the prepared baking sheet and drizzle with oil, massage the kale just until coated in a very thin even layer of oil. Sprinkle with salt, and spices if desired. (I used a blend of cumin and chili powder; see other ideas above.)

Bake kale chips in the oven for about 25-30 minutes, until crispy. They will crisp up more as they cool.

- Storage: Store kale chips at room temperature for up to 1 week, either in an airtight container or a paper bag. You can also freeze them for up to 3 months, but they break easily so I find them difficult to keep in the freezer without breaking.
