Today’s low carb pie recipe has been a long time coming. I actually made it early this past summer, but have been (not so patiently) waiting to post it. Most people don’t want to make pie when it’s hot out! With the cool, crisp weather of fall finally here, I’m so excited to finally share this easy salted caramel pie recipe.
The Best Low Carb Pie For Caramel Lovers
Salted caramel is one of my favorite flavors when it comes to sweets. I make low carb sugar-free caramel sauce all the time. When I had the idea to turn it into a pie, I couldn’t wait to try it out.
As much as I love low carb pumpkin pie and no-bake key lime pie, and even savory Greek spinach pie, I think this easy caramel pie is my all-time favorite so far. It’s rich and decadent tasting, without the sugar. I’m pretty sure it’s the best low carb pie I’ve ever tried! For all the caramel fans out there, this one is for you.
I served this pie for an extended family gathering several months ago, and everyone couldn’t get enough of it. No one could tell it was low carb, sugar-free, and gluten-free. If you and your family like caramel, you’ll definitely want to bookmark or pin this recipe for the upcoming holiday season.
My Favorite Easy Caramel Pie Recipe
Even though it looks impressive, this salted caramel pie recipe is actually quick and easy. It’s fusion of a couple of my favorite recipes. I like combining recipes here on the blog, so that you can re-use the same ideas for different types of foods.
Besides, you can’t go wrong with a low carb pie. And you definitely can’t go wrong with caramel. Why not combine the two, right?
To make low carb caramel pie, just make an almond flour pie crust and sugar-free caramel sauce. You can prepare these two parts in parallel. In fact, if you have another pie crust recipe you like, feel free to use that. You may even be able to swap out another caramel sauce recipe, as long as it’s the kind that would firm up when refrigerated.
Other than that, you need just a few other ingredients to complete your gluten-free caramel pie – heavy cream, sweetener, and vanilla. These are just for the whipped cream layer on top of the caramel in the pie. Toasted pecans on top are optional, but I highly recommend them. So much yum!!
