I am so, so excited! If you are a zucchini lover, you should be too, because I’m about to shower you with low carb zucchini recipes! These baked zucchini pizza bites are the first one.
Yes, one of my favorite times of year is finally here: Zucchini Season!! I love zucchini so much, I have been planning for this time for weeks. This time also happens to coincide with the season for a lot of other fresh produce, making me love it that much more.
The only problem was, how to decide which low carb zucchini recipes to feature on the blog? There were too many to choose from, so there was only one thing left to do. I’m having an entire Zucchini Week to celebrate!
Every day this week, I’m going to post a new low carb zucchini recipe for you. It’s going to be a mix of sweet and savory ones. Let’s start with these cheesy baked zucchini pizza bites!
One of the more common ways to make baked zucchini pizza bites in the oven is to simply slice zucchini, add oil and seasoning, roast, add pizza toppings, and roast a little longer. Basically, that method shares similarities with how to make eggplant pizzas.
This time, I tried something a little different for my zucchini pizza bites. I wanted something I could make ahead and take with me on the go. Making mini meals in muffin pans has always worked out well in my experience. These alternative zucchini pepperoni pizzas were a great way to use my mini muffin pan! I lined it with parchment paper cups for no-mess cleanup.
Zucchini pizza bites are most commonly served as a starter, but they don’t have to be. I’ve had these low carb appetizers even on their own for lunch before! They are delicious, filling, and ready in advance. That makes them ideal for on-the-go snacks or a quick meal. That was the primary reason to make them into mini muffins in the first place.
There is just a small amount of coconut flour in this low carb zucchini pizza bites recipe. I don’t recommend replacing that with another flour, because its main purpose is to absorb moisture. No flour does that as well as coconut flour. I added it to avoid having to squeeze the moisture out of the zucchini, which is kind of a pain.
That being said, if you want to try another flour, it might work, but you may need a little more to compensate. If you use something else, I do recommend squeezing the moisture out of the shredded zucchini first. That way, the zucchini pizza bites will be firm, not watery.
Feel free to customize the toppings to your liking. Pepperoni pizza is by far my favorite (I usually make it on fathead pizza crust). So naturally, I topped my zucchini pizza bites with mini pepperonis. If you can only find bigger ones, you can just cut them into smaller pieces. But, if sausage or veggie toppings are more your thing, go for it!
