My Sugar Free Popsicles Have The Best Smooth Texture, Real Fruit, And Just 42 Calories

When that mid-summer heat hits, there are few healthy treats that hit the spot quite as well as my sugar free popsicles. They’re fruity, just sweet enough, and so refreshingly ice cold. I started making these because store-bought ice pops are often full of sugar, corn syrup, dyes, or artificial sweeteners I don’t want to eat. Here’s why this homemade version turns out so much better:
- Sweet, bright berry flavor – The berries bring the color and fruity aspect, lemon juice makes the flavor pop, and powdered Besti makes the best easy-dissolve, natural sweetener. I like this combo so much more than plain fruit, which can taste a little flat and not sweet enough after freezing.
- Smoother texture – Most no sugar added popsicles get rock hard. These are still ice pops, but the texture is smoother, without that freezer-burn icy edge.
- Made with real fruit – Unlike store-bought versions that are basically sugar (or worse, corn syrup), fake flavors, and artificial colors, the flavor and color in mine comes from real berries. And yes, the berries do add a tiny bit of natural sugar, but I still consider these sugar free popsicles, because the amount is so small! They also happen to be dairy-free, gluten-free, vegan, and just 42 calories each.
- Family friendly, with no aftertaste – My kids will absolutely tell me if a homemade version tastes “too healthy,” and these pass the test. No bitterness or minty taste!
- Fast and flexible – The prep is just blending and pouring, so it takes about 5 minutes before the freezer does the rest. And you can choose either one berry or a combination to get the flavors you want!
If store-bought ice pops never feel worth the sugar or the weird ingredients, I highly recommend adding my healthy popsicles to your freezer stash. Make them with me!

“My kids and I make them all of the time. They’re so easy, and they’re great for when it’s hot out. We usually just use whatever fruit we have on hand, but strawberries and bananas are our favorites.”

Ingredients & Substitutions
Here I explain the best ingredients for my sugar free popsicles recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Fresh Berries – I use berries provide the color and flavor without a lot of sugar. Strawberries, raspberries, blueberries, blackberries, or a mix all work great. Other fruits (like watermelon, peaches, pineapple, mango, or even pitted cherries) are also tasty, but also higher in sugar. If you use frozen berries, thaw them briefly first so they blend smoothly, and add 1-2 tablespoons of extra water if your blender needs help.
- Lemon Juice – Helps keep popsicles fresh, preserves the color, and brings out the sweetness. Store brands use citric acid to achieve this. I used bottled lemon juice for convenience, but you could use 1-2 fresh lemons for an even brighter taste. You can also swap lemon juice with lime juice (I love it with strawberries or raspberries!). Orange will work too, but has a lot of sugar.
- Water – Just enough to help the berries blend into a pourable mixture. Coconut water makes a more flavorful swap if you don’t mind adding natural sugar, but plain water keeps these sugar free popsicles the lightest and lets the berry flavor stand out.
- Besti Powdered Monk Fruit Allulose Blend – This is what makes the texture work. Unlike many sugar substitutes that can taste gritty or freeze very hard, Besti dissolves easily and helps the sugar free ice pops stay smoother. You can also use my Zero Sugar Simple Syrup for a similar result, or for a more intense berry flavor, sweeten with my Wholesome Yum Strawberry Syrup, Raspberry Syrup, or Blueberry Syrup (all made with real berries!). If you want to use something else, I recommend at least a powdered option and you can check my sweetener conversion chart for the amount, but know that the texture of your healthy popsicles will be more dry and icy.

How To Make Sugar Free Popsicles
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Blend the base. Add the berries, lemon juice, water, and powdered Besti to a high-powered blender. Blend until the mixture looks smooth and pourable, with no big berry pieces left.
- Fill the molds. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Add the sticks and make sure they stand straight, so the sugar free ice pops are easier to hold later.
- Freeze and unmold. Freeze the sugar free popsicles until completely solid, then run the outside of the molds under warm water to release. Don’t worry if the first one needs a few extra seconds of water — that usually just means the center is fully frozen, which is what you want.

My Recipe Tips
- Make the mixture taste a little stronger before freezing. Cold dulls sweetness and fruit flavor, so I like the blended mixture to taste a touch sweeter and brighter than I want the final pop to be. If it tastes flat, add a little more lemon juice or Besti before it goes into the molds.
- Blend until completely smooth. This helps the sugar free popsicles freeze more evenly, instead of having watery spots and thick fruit pockets. For extra smooth pops, strain out any berry seeds before filling the molds.
- Leave a little room at the top. The mixture expands as it freezes, and overfilled molds can push the lids or sticks out of place. I stop just below the fill line.
- Freeze until the centers are fully firm. If a popsicle bends, slides off the stick, or feels slushy in the middle, it needs more time. They should feel solid all the way through before unmolding.
- Use warm water to release them. A quick rinse on the outside of the mold loosens the edges. I avoid hot water because it melts the surface too fast and makes the popsicles drip before you even get to eat them.
- Choose molds that release cleanly. I recently switched to these stainless steel molds, and they release better than the plastic ones I used before. They also make it easier to pop out a batch and reuse the molds for another flavor.

- Tips: Check out my recipe tips above to keep these sugar free popsicles smooth, sweet enough after freezing, and easy to unmold.
- Variations: Try my flavor variations below for layered 4th of July popsicles, creamy ones, and other fruit flavors.
- Storage: Remove the frozen popsicles from the molds and place them in individual freezer-safe bags. This works better than storing them in the molds long-term and helps prevent freezer burn. Freeze for up to 6 months.
- Meal prep: Once a batch is frozen solid, unmold and bag the popsicles so you can reuse the molds for another flavor.

Flavor Variations
Once you have the berry base down, these sugar free popsicles are easy to change up. The main thing I watch for is texture: Watery fruits freeze more icy, while creamy ingredients freeze softer and richer.
- Red, white, and blue – Make 1/3 of the recipe with red berries only, such as strawberries, raspberries, or both. Fill the molds 1/3 of the way and freeze for 30 minutes. For the white layer, blend 2 cups of coconut cream with powdered Besti, fill the next 1/3, and freeze for 30 minutes. Finish with 1/3 of the recipe using blueberries, blackberries, or both, then freeze until solid.
- Single berry – Use all strawberries, all raspberries, all blueberries, or all blackberries instead of mixed berries. I like this for a simple version where I don’t have to blend multiple batches.
- Creamy berry – Replace the water with canned coconut milk or coconut cream for a richer texture, without giving up the “healthy popsicles” concept. The flavor is less bright this way, but the texture is softer and more like a creamy frozen dessert.
- Tropical fruit – For a sweeter frozen treat, swap some or all of the berries with watermelon, canteloupe, pineapple, and/or mango. I only recommend this if you’re fine with high natural sugar but no added sugar.
- Fruit chunks – Stir in a few finely chopped berries after blending. Keep the pieces small, because large frozen fruit chunks can taste icy and make the popsicles harder to eat.
