Ingredients & Substitutions
Here I explain the best ingredients for my creamy blue cheese sauce recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Blue Cheese – I used blue cheese crumbles for this sauce, but you could easily crumble your own from a wedge of Roquefort or Stilton.
- Butter – I love this grass-fed butter. Make sure to use unsalted.
- Garlic – Fresh garlic is always best, but a teaspoon of jarred garlic works.
- Mayonnaise – Adds creaminess and helps balance out the tangy blue cheese. Any brand works, or you can make my homemade avocado mayo in just a few minutes for extra clean ingredients.
- Heavy Cream – Thins out the blue cheese sauce and gives it a creamier texture. You can use milk or half and half to lighten it up, but might need a bit less as they are thinner.
- Worcestershire Sauce – For umami flavor. I like this gluten-free brand. Soy sauce or coconut aminos make pretty good substitutes.
- Lemon Juice – To brighten it up. You can try a splash of apple cider vinegar if you’re out of lemons.
- Black Pepper – To your taste.

How To Make Blue Cheese Sauce For Steak
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Melt the butter. In a small saucepan over medium heat, melt the butter. Add the garlic and sauté until fragrant.
- Mix and heat the sauce. Turn the heat down to low. Stir in the mayo, cream, blue cheese, and Worcestershire sauce. Warm for a few minutes, mashing the blue cheese as it melts (see my tips below for the best results here!).
- Add lemon juice and black pepper. Remove the blue cheese sauce from heat, then add them to your taste.


My Recipe Tips
- Make sure to keep the heat on low. Since this sauce contains mayo, it will split if you overheat it. Remove from heat as soon as it’s warm.
- Mashing the blue cheese against the sides of the pan infuses the sauce with more of its flavor. If you use a nonstick pan, use a wooden spoon to prevent scratches.
- Adjust the consistency to your liking. This blue cheese sauce is pretty thick! Feel free to add more milk or cream, a tablespoon at a time, if you want it thinner.
- What about salt? I didn’t need to add any, as the sauce was salty enough from the blue cheese, but you can add some to taste if needed.

Serving Ideas
Naturally this is the perfect blue cheese steak sauce (hello, ribeye or filet mignon!), but it’s more versatile than that. Here are a few other ways I love to use it:
- Buffalo anything – This sauce is the perfect way to cool down the heat from my baked buffalo chicken, buffalo chicken soup, or air fried buffalo cauliflower. And of course, buffalo chicken wings are a given!
- Burgers – Try it with my beef burgers, lamb burgers, or even turkey burgers.
- Vegetables – I love drizzling blue cheese sauce over roasted broccoli, cauliflower, or brussels sprouts in particular. But it’s a great flavor boost on all kinds of roasted veggies.
- Fries – Dip your steak fries or air fryer french fries! For a lighter option, make my zucchini fries.
Blue Cheese Sauce
This rich blue cheese sauce for steak is creamy, tangy, and perfect for drizzling over your favorite cut of beef. Ready in just 10 minutes!

Melt the butter in a small saucepan over medium heat. Add the garlic and saute for about 1 minute, until fragrant.

Reduce the heat to low. Stir in the mayonnaise, milk or cream, blue cheese crumbles, and Worcestershire sauce. Heat for 2-3 minutes, mashing the blue cheese against the bottom and sides of the pan with a spoon, just until warm. Be careful not to overheat, or the sauce may split.

Remove from heat. Stir in the lemon juice. Season with black pepper to taste.
