Show of hands… who else loves buffalo wings? Personally, I love the flavor, but I’m one of those super weird people that doesn’t like eating wings off the bone. (Excuse me while I go hide as you stare in disbelief of that statement.) The good news is, today I have a healthy replacement that is – dare I say it – even better. Low carb buffalo turkey meatballs!
These buffalo turkey meatballs are just brimming with flavor, despite the small handful of ingredients they require. I went back and forth on whether to make them with chicken or turkey. Buffalo chicken meatballs certainly would have been the more popular or well known option! But, I found that ground turkey is so much more rich than ground chicken, which can be a little dry. For this reason I went with the turkey, but this buffalo meatballs recipe will work almost as well with chicken, too.
I don’t watch football, but I think these low carb meatballs would make a fantastic tailgating appetizer. They have that classic buffalo chicken taste that is so popular especially during football season, and they’re so juicy that no one will guess how healthy they are.
Now, even though these are made with turkey, I still believe in keeping with the spirit of authentic buffalo chicken meatballs. That means serving them with blue cheese and celery is a must! A sprinkle of chopped chives is also a perfect contrast to add in.
Now that I think about it, I don’t understand why meatballs are always touted as primarily an appetizer. Why can’t they be a main dish? They are packed with protein just like your other typical main dishes, so why not? In my case they turned out to be a fantastic dinner with a side of veggies. (Update: If you’re still on the fence about whether these can really be dinner, I’ve got another option for buffalo chicken flavor for dinner – buffalo chicken zucchini boats!) Whether you choose to eat these buffalo turkey meatballs as an app or an entree, you can’t go wrong.

Buffalo Turkey Meatballs (Low Carb, Gluten-free)

- 1 1/2 lb Ground turkey
- 1/4 cup Egg white
- 1/2 cup Blue cheese (crumbled)
- 1/2 cup Green onions (chopped)
- 1/2 cup Cayenne pepper sauce (such as Frank's Red Hot)
- 1 tbsp Olive oil

Preheat the oven to 400 degrees F (204 degrees C). Line a baking sheet with parchment paper or a silicone mat.
Combine the turkey, egg whites, blue cheese, scallions, and 3/4 of the cayenne pepper sauce in a bowl. Form into 1 in (2.5 cm) balls and place on the lined baking sheet. Bake for 12-15 minutes, until barely done.
- Meanwhile, whisk together the remaining cayenne pepper sauce with the olive oil.
Drain the fluid released by the meatballs and transfer them to a clean sheet of parchment paper (still on the baking sheet). Drizzle a small amount of the cayenne olive oil mixture over each meatball. Bake for 2-3 minutes.
Serving size: 4 meatballs
