Some of my favorite kinds of recipes are the quick and easy ones you can make in two minutes. Be it an English muffin or a vanilla mug cake, the ability to prepare a mini meal or snack in minutes is a lifesaver on busy days. That’s why I was excited to discover Nush Foods low carb snack cakes. In fact, I liked them so much that I turned one of them into a 2-minute banana poke cake recipe.
You may have noticed that I haven’t featured too many products here at Wholesome Yum. The reason is, I’m very selective and only share those that I truly support.
When Nush Foods reached out to me to try their low carb snack cakes, I was both excited and a little skeptical. Could these little cakes really taste good and have ingredients I want to put in my body? They do.
I don’t know about you, but I’m always looking for quick and easy snacks – either to grab on the go, as a quick breakfast, or even dessert when the mood strikes. Unfortunately, there aren’t many low carb, gluten-free snack products on the market that I want to eat. Most of them are packed with artificial preservatives, fillers, sugars, or high-glycemic sugar alcohols.
The ingredient list for Nush Foods snack cakes was immediately intriguing. It was strikingly similar to how I would make a homemade flaxseed muffin! I haven’t yet experimented with muffins made using only flaxseed meal as the flour, but my cinnamon swirl mug muffin does share some similarities.
Nush Foods snack cakes are not only low carb, all the ingredients are also gluten-free and natural. For example, the Banana Nut Cake used in this banana poke cake recipe contains water, flax seed, erythritol, egg, banana, glycerin, walnuts, oil, natural flavors, leavening, sea salt, soy lecithin, and rosemary extract. Even though I usually avoid soy, I’m okay with the tiny amount here (listed second-to-last), especially since it’s organic. In fact, every ingredient listed is organic!
They even use my favorite sweetener, erythritol. How cool is that?! Most sugar-free products use either artificial sweeteners or high-glycemic sugar alcohols, like maltitol. Erythritol is natural, tastes great, and doesn’t impact blood sugar, which is why I use it in most of my sweet recipes. I was thrilled to see it as the sweetener in the Nush Foods snack cakes.
There are four flavors available – Lemon Poppy Seed, Cocoa, Banana Nut, and Carrot Spice. I had a hard time deciding which one to try first! All of them turned out to be delicious, but the Banana Nut Cake was my favorite.
Until now, the only way I’ve been able to have banana anything is by making low carb banana bread. It’s nice to have another option. I went through a few packages of the cakes plain, the same week that they arrived.
One morning, I thought, what if I turn this banana nut cake into a super quick banana poke cake recipe? Best. Idea. Ever.
The Nush Foods snack cakes are lovely to grab on their own (or simply topped with butter or cream cheese), but they are even better with a sweet banana cream topping! I heated up my banana nut cake, poked holes in it, drizzled it with banana cream glaze, and sprinkled chopped walnuts over the whole thing. Ta-da… Instant Banana Poke Cake!
Oh my goodness, it was so good. It felt like dessert, but with the nutrient content and low net carbs (only 3 grams), it was perfect for breakfast. Want to try some?
