Happy New Year!! I’m so excited to find out what the upcoming year will bring, and I hope that you are, too! We have family coming over today to celebrate, so I’ll keep this short and sweet. I just wanted to share this zucchini stir fry recipe with you before I continue with my preparations. It’s just too good not to, and it’s perfectly fitting for the resolutions many of you may have made starting today.
Whether you’ve made an explicit resolution to be healthier this year or not, there’s no arguing that most of our bodies are crying out for refreshing detox food after all the holiday treats. Most of mine happened to be low carb and gluten-free, but even with those it can become too much. A fresh meat-and-veggie meal is much needed after all that.
This easy zucchini stir fry recipe is your answer right now. Just a few common ingredients, 20 minutes of prep time, and you’ve got dinner on the table. It’s super simple to throw together on a busy weeknight, makes for a quick all-in-one meal, and doesn’t require a lot of dishes to wash afterward, either.
Yes, this skillet meal is what I need in my life right now. Not only does it fulfill the need for something lighter and healthier, but it’s also a refreshing change of pace after the more complicated cooking many of us did throughout the holiday season.
Besides, the medley of flavors in this zucchini stir fry puts a big smile on my face! The salty, smooth pesto, flavorful ground beef, naturally sweet zucchini, and creamy goat cheese all compliment each other perfectly. Yum, yum.
You could use a nut-free pesto (or make your own) if you prefer it to be nut-free, or if you want it paleo, just omit the goat cheese and use a dairy-free pesto. (Update: I love it with my simple 2-minute homemade macadamia nut pesto.) What’s not to love?

In a large skillet over medium heat, cook minced garlic for about one minute, until fragrant.
Add ground beef. Sprinkle with sea salt and black pepper to taste. Increase heat to medium high. Cook for 7-10 minutes, breaking part with a spoon or spatula, until browned.
Add zucchini. Cook, stirring occasionally, for 5-7 minutes, until zucchini is starting to soften (but not soggy) and golden.
- Remove from heat. Stir in basil pesto. Toss with goat cheese and fresh parsley.
Serving size: 1/6 of entire pan
