I hope everyone had a nice Father’s Day weekend. We had dinner with our parents at our place. I served my husband’s favorite filet mignon, which my dad got to try for the first time – and he even went to read my blog post, which he never does. I paired the steak with my new cheesy cheddar broccoli rice recipe. I’m pretty excited about having this new easy low carb side dish option!
I’m a big believer in food as medicine. If you’ve read a little bit about me, you know that I noticed a great improvement in mood and energy levels since I started my low carb lifestyle. I absolutely support science (Western medicine has done amazing things!), but think we can do more on the prevention side. And, I love discovering foods and natural remedies that help with that.
Although this healthy broccoli rice recipe is total cheesy deliciousness, it also has benefits we shouldn’t overlook…
Surprising Benefits of Cheddar Broccoli Rice
The star of this cheddar broccoli rice is, of course, broccoli!
I’m sure it’s not news to anyone that broccoli is good for you, but you might be surprised that it can actually help with anxiety and mental health. How? It’s packed with magnesium, vitamin C and B vitamins, all of which have positive effects on stress and anxiety. *, *, *
This keto broccoli cheese soup is another delicious way to enjoy the many health benefits of broccoli.
If stress and anxiety is something you struggle with, consuming foods to support you can be a big help, but the next step would be a natural remedy. Since supplements are not regulated, I take any recommendations I make very seriously. I only advocate products I have personally tried, where I can vouch for the results I have seen, from companies I trust.
Anxiety Free from RidgeCrest Herbals is one I gladly recommend. When I have a particularly stressful situation, this is what I use to manage it naturally. And for people with ongoing anxiety, the bottle recommends a smaller maintenace dose.
What is it? Anxiety Free is a combination of natural herbs that can help reduce stress and anxiety, including eleuthero root, lemon balm leaf, passion flower, lavender, ashwagandha root extract, and holy basil extract. None of these are stimulants or sedatives, so they shouldn’t mess with sleep or make you jittery. It also includes l-theanine, an amino acid that has been shown to reduce stress * and a combination of peppers (sichuan, black and habanero) to help with bioavailability.
Just as important is what these supplements don’t have. They are free of gluten, dairy, corn, GMO, soy, wheat and yeast. And, the company even started a Transparency Project because they want to be open about their ingredients and manufacturing practices.
Did I mention Anxiety Free is packed with lots of B vitamins? Yep, just like our yummy, cheesy broccoli rice! Let’s make some, shall we?
How To Cook Broccoli Rice
Cheddar broccoli rice is one of the easiest low carb side dishes you can make. It takes just 15 minutes from start to finish!
Ingredients for Cheddar Broccoli Rice
You need only five basic ingredients:
- Cheddar cheese
- Heavy cream
Oh, and salt and pepper, but who’s counting those? 😉
You can see the ingredient amounts for the cheesy broccoli rice on the recipe card below.
The Easy Cheddar Broccoli Rice Recipe
Now, how to cook broccoli rice with these ingredients?
To start, rice the broccoli. This is similar to making cauliflower rice! Broccoli rice is less common, but it’s the same idea. I like to use a food processor with a shredding attachment, but a box grater should be fine too.
Next, heat the cheese and cream until melted and easy to stir. Either the microwave or a double boiler on the stove are possible options. Season the cheese sauce with sea salt and black pepper to your liking.
Meanwhile, you can start cooking the garlic in some butter in a saute pan. It only takes about a minute. Add the broccoli, and stir fry for about 3 minutes.
When the sauce is done and smooth and broccoli is cooked, add the sauce and toss together. If it looks too thick to add as-is, you can thin it out with more cream. Mix quickly before it has a chance to thicken too much, which will happen as it cools.
Tips for Cooking Broccoli Rice
- Don’t overcook the broccoli rice! If you do, it will be mushy. It should be just barely tender.
- Use a heavy bottom pan. This will ensure even heating. I like to use heavy hard anodized pans, which are non-stick but PTFE/PFOA free.
- Use medium-high heat. Unlike lower temperatures, this will produce the best flavor and texture, and reduce any smell.
- Do not cover it. Covering will steam the broccoli rice and make it more watery. Stir fry instead.

When the cheese sauce is ready, add it to the broccoli rice right away before it has a chance to thicken. (If it's too thick and gooey, thin out with more cream first.) Season with more sea salt and black pepper to taste, if desired.
