How To Cook Broccoli Rice
Cheddar broccoli rice is one of the easiest low carb side dishes you can make. It takes just 15 minutes from start to finish!
Ingredients for Cheddar Broccoli Rice
You need only five basic ingredients:
- Cheddar cheese
- Heavy cream
Oh, and salt and pepper, but who’s counting those? 😉

The Easy Cheddar Broccoli Rice Recipe
Now, how to cook broccoli rice with these ingredients?
To start, rice the broccoli. This is similar to making cauliflower rice! Broccoli rice is less common, but it’s the same idea. I like to use a food processor with a shredding attachment, but a box grater should be fine too.
Next, heat the cheese and cream until melted and easy to stir. Either the microwave or a double boiler on the stove are possible options. Season the cheese sauce with sea salt and black pepper to your liking.
Meanwhile, you can start cooking the garlic in some butter in a saute pan. It only takes about a minute. Add the broccoli, and stir fry for about 3 minutes.
When the sauce is done and smooth and broccoli is cooked, add the sauce and toss together. If it looks too thick to add as-is, you can thin it out with more cream. Mix quickly before it has a chance to thicken too much, which will happen as it cools.
Tips for Cooking Broccoli Rice
- Don’t overcook the broccoli rice! If you do, it will be mushy. It should be just barely tender.
- Use a heavy bottom pan. This will ensure even heating. I like to use heavy hard anodized pans, which are non-stick but PTFE/PFOA free.
- Use medium-high heat. Unlike lower temperatures, this will produce the best flavor and texture, and reduce any smell.
- Do not cover it. Covering will steam the broccoli rice and make it more watery. Stir fry instead.

This cheesy broccoli rice recipe goes with so many things! It makes an easy side dish for a weeknight since it takes just 15 minutes to prepare. But, it’s also interesting enough to serve for company if you want to.

Using a food processor with a shredding attachment, or a box grater, rice the broccoli to make broccoli rice.
In a double boiler on the stove, or in the microwave, heat the cheddar cheese and heavy cream until the cheese melts and is easy to stir. Stir until smooth. Season with sea salt and black pepper.
Meanwhile, melt the butter in a saute pan over medium heat. Add garlic and saute for about a minute, until fragrant.
Increase heat to medium-high. Add the broccoli rice. Stir fry for about 3 minutes, until tender but not mushy.
When the cheese sauce is ready, add it to the broccoli rice right away before it has a chance to thicken. (If it's too thick and gooey, thin out with more cream first.) Season with more sea salt and black pepper to taste, if desired.
