When Maya asked me to share a low carb hamburger roll recipe, I wasn’t sure which low carb bread recipe to use as the base. There are so many to choose from!
Well, it took a little trial and error to find the right one. I started out trying to modify a basic cloud bread recipe. But, the texture wasn’t quite right for low carb hamburger buns.
Then I moved on to the ever popular Soul Bread recipe which is known for it’s light texture. However, the texture wasn’t soft and spongy like I wanted the low carb burger buns to be.
It wasn’t until a reader left a comment on my coconut flour psyllium husk bread recipe that the light bulb finally went off. Of course! Coconut flour provides a light texture and psyllium provides the structure of gluten. The ideal combination for hamburger rolls!
I ended up getting the low carb hamburger buns right on the first try using the coconut flour psyllium bread recipe. The primary changes are using mainly egg whites and baking in round molds. I also used avocado oil instead of olive oil.
Typically, it’s not recommended to use egg yolks along with psyllium husks. It can result in an ammonia smell. However, I chose to use two whole eggs in these low carb burger buns which didn’t have that effect.
If you prefer, you can sub out the whole eggs with four egg whites. The reason I didn’t do that is because a carton of egg whites is equal to 2 cups, just shy of the 2 1/4 cups eggs or egg whites called for in the recipe.
Separating fresh eggs to get more egg whites would also have resulted in the need to either toss out the yolks or find a use for them. Plus, it’s easier to just dump in the whole carton of egg whites and then add in two large eggs.
Once you give these low carb hamburger buns a try, you’re going to want to make the psyllium husk bread for other uses. It can easily be worked into low carb hotdog rolls too. Or, simply bake it in an 8×4 loaf pan like the original recipe. (You can make psyllium husk bread with coconut flour like mine or with almond flour like Maya’s low carb bread recipe.)
I used two lightly greased muffin top pans to get the low carb burger buns into perfect rounds. But, you can form the rolls by hand as well because the batter is pretty thick.

Preheat oven to 350 degrees F (177 degrees C).
- Lightly grease a muffin top pan (or use a lightly greased sheet pan for hand formed rolls).
- Mix psyllium and water in small bowl, set aside. It will turn into a thick gel.
- Add remaining ingredients into a food processor (or mixing bowl) and pulse (or blend with electric mixer) until well combined.
- Add psyllium gel into the food processor (or mixing bowl) and pulse (or blend with electric mixer) until mixed in.
- Divide batter evenly between 12 muffin top molds (or shape into 12 rolls with wet hands). Smooth top, if desired.
Bake for 25-30 minutes or until edges are brown and toothpick inserted near center comes out clean.
Let rolls sit in pan for 10-15 minutes. Remove bread from pan and allow to cool completely on rack.
