My Easy Taco Soup Recipe Needs Just 5 Ingredients

This taco soup is one of the easiest soup recipes I’ve ever made, and somehow still one of the most flavorful. I combined my favorite homemade taco meat and my go-to ranch dressing recipe to create this flexible, super simple base that has endless customization options. Here’s why this taco soup recipe is such a winner:
- Savory, zesty, and a little creamy – The ground beef is the hearty base, the taco seasoning adds smoky heat, the tomatoes bring tang, and the ranch mellows everything out.
- Just 5 simple ingredients – I always love a good few-ingredient recipe, but was extra impressed by how little was needed to make this one flavorful. Just beef and a few pantry staples!
- One pot, 20 minutes – Browning the meat is the only real prep, and the rest I literally just dump in. My easy taco soup recipe is the warm, low-effort version of taco night, in 20 minutes start to finish.
- Customize it your way – This soup is super tasty on its own, or you can make it heartier with beans, corn, or veggies. And I love that each person can customize toppings — one of the best parts about Mexican food.
If you like my taco salad when it’s warm out or my cheesy taco casserole when you want something extra hearty, this taco soup is the cozy one-pot version. Make it with me!

“This is so simple to make and so delicious! I was worried since it only has 5 ingredients, so I normally would not have even tried it. Everything in this recipe came together beautifully. I have never reviewed anything from any website until now!”

Ingredients & Substitutions
Here I explain the best taco soup ingredients, what each one does, and substitution options. For measurements, see the recipe card.
- Ground Beef – I use this 85/15 grass-fed ground beef, which is a nice balance of flavor without making the soup greasy. You can also swap in ground turkey, ground chicken, or even cooked shredded chicken.
- Taco Seasoning – My homemade taco seasoning has chili powder, cumin, smoked paprika, oregano, garlic, onion, and a little cayenne. A store-bought mix is fine, but check whether it contains salt. If it doesn’t, add 1 teaspoon of salt per pound of beef, then adjust at the end.
- Broth – I’ve made this taco soup recipe with store-bought beef broth as well as homemade bone broth. Both are great for a rich beefy flavor. Vegetable or chicken broth are okay in a pinch, and can still take on some flavor from the ground beef.
- Diced Tomatoes – Add the canned tomatoes with all their liquid, since it becomes part of the broth. Feel free to swap in fire-roasted tomatoes for a smoky flavor, tomatoes with green chiles for more heat, or even chunky salsa. Tomato sauce can also work if you prefer your soup to be smooth, but I think it tastes better with some texture.
- Ranch Dressing – I used homemade ranch dressing (it takes 5 minutes!), but store-bought is fine, too. (Since many of you asked, this is liquid dressing, not ranch seasoning mix!) Plain Greek yogurt or sour cream can substitute if you don’t like ranch, just keep in mind the taco soup won’t get that herby flavor.

How To Make Taco Soup
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Brown the beef. Cook it in the bottom of a large pot or Dutch oven over medium-high heat, breaking it apart, until no pink remains. Drain any excess grease it if it seems like a lot.
- Season the meat. Add 2/3 of the taco seasoning and a little broth. Simmer until most of the liquid disappears, so the beef soaks up the spices.

- Simmer the soup. Stir in more broth, more taco seasoning, and the diced tomatoes with their liquid. Bring the taco soup to a gentle boil, then reduce to a simmer so the flavors can come together.
- Stir in the ranch. Remove the pot from the heat and wait until the bubbling subsides before adding the dressing. I stir gently until the broth looks evenly creamy. Garnish with your favorite toppings — I’ve included topping ideas for this taco soup recipe below!

My Recipe Tips
- Keep the ranch away from high heat. Ranch is an emulsion, so boiling can make it separate. I take the pot off the burner and wait for the bubbling to stop before stirring it in, then warm leftovers gently. If you want to be on the safe side, you can temper it first: Just whisk it with a little warm broth before adding to the taco soup.
- Don’t skip the first seasoning simmer. Reducing the small amount of broth with the beef helps the spices coat the meat instead of tasting diluted in the finished soup.
- Taste before adding more salt. Taco seasoning, broth, and bottled ranch can all vary quite a bit. I wait until the ranch is mixed in, then adjust at the very end.
- Use a wide, heavy pot. It gives the beef room to brown instead of steam. I use my meat chopper to break the meat into even crumbles.

- Variations: See my recipe variations below for a heartier soup or alternate cooking methods.
- Store: Keep leftovers in an airtight container in the refrigerator for up to 3-4 days.
- Meal prep: Make the soup base ahead, then reheat it and stir in the ranch just before serving.
- Reheat: Warm gently on the stovetop over low heat, or use the microwave at reduced power, to keep the ranch from separating.
- Freeze: For the smoothest texture, freeze the soup before adding the ranch. It freezes well for up to 6 months. Thaw overnight in the refrigerator, reheat, then stir in the dressing.

Easy Taco Soup Recipe
Recipe Variations
My base recipe for taco soup is intentionally simple, but I’ve changed it up in different ways over the years. (In fact, I often add a little something different every time I make it.) Here are some easy ways to make it heartier, spicier, or hands-off:
- Add beans or corn – Stir in canned black beans (my fave add-in for this easy taco soup recipe), pinto beans, kidney beans, or corn near the end of cooking. I recommend draining and rinsing them first, so they don’t cloud the broth.
- Add vegetables – Brown diced onions or bell peppers with the beef, or add zucchini or yellow squash to the simmering soup. For more heat, use tomatoes with green chiles or add sliced jalapeños to each bowl.
- Crock Pot taco soup – Brown the meat as directed, then transfer it to a slow cooker. Cook on High for 1-2 hours or Low for 3-4 hours, then stir in the ranch just before serving.
- Instant Pot taco soup – Brown the beef using Saute, then add the taco seasoning and 3/4 cup of broth, and cook until the liquid evaporates. Add the remaining broth, tomatoes, and seasoning, then cook on high pressure in an Instant Pot for 5 minutes. Quick release, let the bubbling subside, and stir in the ranch with the heat off.

Topping Ideas
I think the toppings are the best part, and they also let everyone adjust the heat and texture in their own bowl. Here are some great options to add to this taco soup recipe:
- Creamy toppings – Add shredded cheese (I like Cheddar, Monterey Jack, or Mexican blend), sour cream, diced avocado, or even a spoonful of guacamole.
- Fresh and spicy toppings – Try chopped cilantro, green or red onion, jalapeños, or a squeeze of lime. I like these brighten the warm spices and give the taco soup more contrast.
- Something crisp – Crushed tortilla chips add crunch right on top. On the side, I like the cool crunch of taco slaw, or you can add cilantro lime cauliflower rice or even cooked brown rice for a more substantial bowl.

0I added Rotel tomatoes to this dish in addition to the diced tomatoes. Also, I could not believe that there was not a suggestion to top not only with cilantro and cheese but sour cream dollop and avocado slices or chunks. That’s the way we make it in Texas and so that’s how I’m topping tonight.

0What ranch dressing ,dry season ingredients or bottled dressing?

0Hi Rene, The link in the recipe card takes you to my recipe for ranch salad dressing, but you can use bottled if you prefer.

0I’ve made this soup a number of times. It is really good. I made it again today for my mother and she loved it! This is definitely one of my faves.
Chelsie
0Love this meal!!!! We did a 1.5x batch and added a couple diced bell peppers! Served with an air fried low carb tortilla, cut up into chips!
Susan
0Delicious! My husband loved this soup. I had to keep him from eating the whole thing. Will definitely be making this again. I used the homemade taco seasoning and the homemade ranch dressing. Best ranch dressing I have ever tasted! I did add a little leftover salsa.
Shree
0This was great. I kicked up the heat and used hot ground pork Will be making it again.

0I made this for the first time last week. OMG. So tasty! Reheats and microwaves beautifully. This is definitely in my regular rotation. I love soup to begin with, and I love tacos. When I saw the recipe I said I just gotta try it. Great combo and keto too! Win all around!
Dime
0Not bad!! I wanted to love this recipe but the ranch was way overpowering. I also added an onion and more spices/broth once I realized it tasted like ranch. It reheated well.

0OMG!! Best soup ever said my non-keto husband! I agree. This is a delicious and flavorful soup. I used taco seasoning and ranch dressing I had on hand and it was still fantastic. Next time, I will make Maya’s taco seasoning and ranch dressing, I am sure that will kick up the yum on thus already yummy soup. Don’t wait, make it tonight!! I topped with half a low carb tortilla that I cut into strips and cilantro and cheese. Leftovers, I topped with cheese, cilantro, and avocado.

0I add diced onion & celery and any other vegetable I have around and it makes a nice hearty soup that fills you up.
Caroline
0Tasted good but far too broth-y for my liking. I sautéd a small yellow onion before adding the ground beef to add a little more texture. Also garnished with green onions, a squeeze of lime juice, cheddar cheese and 1/4 small avocado. Turned out yummy but next time I’ll cut the broth amount in half, and maybe try veg broth vs beef broth.

0I make your taco casserole at least a once or twice a month, so I always have your taco seasoning on hand. It’s a huge hit. It was on tap for tonight with ground chicken because that’s what I had on hand, but I just didn’t feel like cooking. A taco soup felt easier while still accomplishing the flavor I was looking for & was overjoyed to see your website pop up on the search. All of the recipes I’ve tried from you are winners.
I doubled this with ground chicken & chicken broth because it was in hand & used tessamae’s ranch. Cooked in the instant pot & it was a winner even with my picky children. Thank god I doubled the batch too, I’m sure just 1 portion wouldn’t have been enough it’s already have gone between 3 kids & 3 adults.
Thanks again.

0Thank you for such great ideas and your flexibility in providing your recipes

0This taco soup was delicious! I get a little nervous trying new things because my husband is sort of picky and is not on keto so I try to make things we can both eat and enjoy! He loved the soup, so it was a win!

0I have some homemade chipotle ranch dressing I need to use up…..guess where it’s going?!? Nice to see a Taco Soup recipe that doesn’t use cream cheese or is cream based. While I love the richness of those recipes, they are too rich for some of my non-Keto family, so I can’t wait to try your lighter version. I might even try a chicken version with shredded chicken after I try the original recipe. I love your recipes, they are always delicious and easy.! Thanks for all you do, Maya!

0So, so yummy!!

0Can you please help…..I am very sensitive to salt, and as you know, salt is in EVERYTHING! I do make my own taco seasoning but would like to know if you include the sodium count in your recipes.
Wholesome Yum A
0Hi Paula, you can find other nutritional information below the recipe card, but this doesn’t include sodium. I’d recommend checking the USDA Food Database or use your favorite macro calculator.
Jennifer
0Since I am on the ketogenic plan I added a block of full fat cream cheese which added a creamy texture and a great flavor. Thanks for the recipe!
