Well, now you don’t have to choose. Low carb maple bacon pancakes make a perfect breakfast that is both sweet and savory, without the work of cooking several different things.
In case you needed me to state the obvious, you really can’t go wrong with aromatic maple and smoky bacon together. The problem is that maple syrup is high in sugar, so for this recipe I used maple extract and erythritol as a sweetener instead. Perfectly natural, without all the carbs and sugar. These maple bacon pancakes are made with almost flour, so the entire batter is low carb and gluten-free, too.
I’ll admit I’m in a rush today, so I’ll try to keep this short and sweet. Like these maple bacon pancakes. Oh, these cute little miniature pancakes. Despite being in a hurry, I can’t stop gushing about them. (Did I just say “gushing”? Well, that’s a first.)
If you don’t add extra syrup on top, these pancakes make a portable breakfast or snack to grab and go. If you have a busy job, or small (or even not-so-small) children, you know you can never have too many ideas for those.
Pancakes actually make a great portable snack if they have something in the batter to give them flavor without needing syrup. Well, these have maple extract and bacon… need I say more? That’s not to say that syrup doesn’t make them even more delicious, though.
