Unless the recipe states otherwise, keto cookies usually use granulated sweeteners.
2. Use almond or coconut flour.
If you follow a low carb lifestyle, you’ll most likely make keto almond flour cookies or coconut flour cookies. These two flours are not only keto friendly, but they also have the closest texture to wheat flour with the right modifications.
Though not identical, almond flour makes the closest swap for white flour in cookie recipes. Coconut flour absorbs a lot of moisture and can be drying, so in comparison to recipes using other flours, it typically needs extra eggs, fat, liquid, or a combination of these.
TIP: As a rule of thumb, you’d use 1/4 to 1/3 the amount of coconut flour, compared to almond or other flours, if keeping the wet ingredient amounts the same.
During this step, you’ll want to add other dry ingredients that make your keto cookies bake correctly. Dry ingredients may include:
- Xanthan gum: Acts as a replacer for gluten to help cookies hold their shape.
- Baking powder: Helps cookies rise.
- Salt: Intensifies flavors, while keeping cookies from tasting cloyingly sweet.
- Cocoa powder: Great for making chocolate cookies!
- Spices: Cinnamon is one classic option, but powdered ginger, nutmeg, or cloves can also add delicious flavor.
3. Choose your favorite add-ins.
Keto friendly cookies taste so good with extra texture and flavor! Keep it classic, or go a little wild with mix-ins like these:
- Chocolate chips: Go with keto-friendly chips in milk chocolate, dark chocolate, or white chocolate varieties.
- Dried cranberries: Make your own sugar-free dried cranberries to keep them sugar-free and low carb.
- Nuts: Choose keto friendly nuts for a hearty crunch.
- Chopped sugar-free candy: Try keto peanut butter cups!
- Crumbled bacon: Add smoky depth. The easiest way is to make bacon in the oven and then crumble it.
- Citrus zest: Add a little zing to the sweet dough. Lemon, lime, or orange all work great!
Make sure to fold them in carefully so they don’t break into smaller pieces, and avoid adding too much, so the dough will still hold its shape.
Unlike many regular cookies, keto cookies don’t usually spread much in the oven — so, you’ll want to flatten them into a more cookie-like shape. The main exception is for flourless cookies.
Baking time varies, but keto cookie recipes usually call for 10-12 minutes in a 350-degree Fahrenheit oven. If you’re making a totally new recipe, check a minute or two earlier in case they finish a little faster.
