Why You Need My Keto Lemon Curd Recipe

- Light and sweet with tart lemon taste
- Luxuriously smooth texture
- Made with just 4 ingredients
- Only 10 minutes total time
- Just 0.5 grams net carbohydrates per serving

Is Lemon Curd Keto?
Regular lemon curd is not keto (so much sugar), but this easy low carb lemon curd is keto friendly! Each tablespoon serving has just 1/2 gram of net carbs.
For the smoothest lemon curd, the sweetener makes a huge difference! That’s why this recipe uses Besti Monk Fruit Allulose Blend. It dissolves effortlessly into the lemon curd, so it’s never gritty — with no added net carbs!

Ingredients & Substitutions
Here I explain the best ingredients for my sugar-free lemon curd recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Butter – Use unsalted.
- Lemons – You’ll need about 3-4 whole lemons, as we’re using both fresh lemon juice and zest.
- Egg Yolks – Using the yolks only gives this lemon curd a luxurious texture. Make sure they are at room temperature before you begin. Save the whites and make a keto lemon meringue pie or keto bread!
- Besti Monk Fruit Allulose Blend – The best way to have all the sweetness of sugar without the sugar and carbs. Unlike other sweeteners (including erythritol and other brands of monk fruit sweetener), Besti dissolves completely and won’t crystallize, which is why it’s the only one I recommend for this sugar free lemon curd recipe. It’s also fine to use Besti Powdered — both versions dissolve easily.
- Sea Salt – To balance the sweetness.

0Hi Maya, can this be frozen? Thanks Marj
Maya | Wholesome Yum
0Hi Marj, Yes, you can freeze this sugar-free lemon curd for up to a year.

0Question about the instructions: I have previously made lemon curd using Ina Garten’s recipe. In that recipe you mix the lemon zest, sugar and softened butter together, add juice and then cook over heat. Would your recipe work mixed that way or is there a reason why the butter has to be melted first when using monk fruit allulose instead of sugar? Thanks for this recipe. I love adding lemon curd to homemade SIBO yogurt but didn’t want the sugar. This is a great substitute.
Maya | Wholesome Yum
0Hi Lee, This is just how I made mine. There are a million ways to make recipes and I haven’t tried Ina’s, so can’t say if it would work that way or not. Let me know how it goes if you try it!
Nancy Williams
0I made this and did not like it at all, it tastes like it had too much salt. what did I do wrong? I followed the recipe to a tee.
Wholesome Yum D
0Hi Nancy, Sorry this recipe didn’t turn out as expected. The recipe only called for 1/4 tsp of salt so over 20 servings it should be that noticeable.
Angelia
0Can I use my juicer for the lemons? Thought might be easier and yummier? Thoughts?
Wholesome Yum D
0Hi Angelia, I have never tried but let me know the results if you do.
Sally Rigsby
0All I have on hand is salted butter. Can I use that and not add the addition of sea salt? I also have allulose. Would that crystallize (monk fruit raises my bs)?
Wholesome Yum D
0Hi Sally, Yes, salted butter would be ok. If you are using another sweetener you’ll want to use my Keto Sweetener Guide to make sure you use the correct amount.
Amy Hunter
0This called for 1/2 cup of butter. Is that correct? I feel like that was way too much. I’ve seen other recipes that at the most called for 5 tablespoons.
Wholesome Yum D
0Hi Amy, This is the correct amount of butter.
Nancy Onque
0I made this recipe and followed it exactly, but it has a metallic taste. Any suggestions?
Jezzie
1Hi! I think I know what happened because it’s happened to me before! You must use a stainless steel saucepan or double broiler (or glass). Do NOT use aluminum or copper. 🙂 Look it up for more details.
Wholesome Yum D
1Hi Nancy, I’m not sure why that would have happened. Did you use Besti Monk Fruit Allulose Blend?
Sandy
0We cook with lemon curd all the time, and now I have a delicious KETO option. Thank you!
Shelby
0I have officially now put this lemon curd on everything! It’s so tasty and it’s so far worked on cookies, overnight oats, and my morning oatmeal hehe.
Margaret G
0How do you keep monk fruit from crystallizing in your recipe?
Wholesome Yum D
1Hi Margaret, Did you use Besti Monkfruit Allulose Blend?
Audra
0Does this curd recipe crystalize when chilled? I have made others with different sugar substitutes and get varying levels of crystallization that needs warming to smooth out the crunch. I love my lemon curd.
Thank you in advance.
Maya | Wholesome Yum
1Hi Audra, Using Besti it will not crystallize at all. 🙂
Maggie
0So so good! I followed your recipe and it turned it perfectly!
