Is Lemon Curd Keto?
Regular lemon curd is not keto (so much sugar), but this easy low carb lemon curd is keto friendly! Each tablespoon serving has just 1/2 gram of net carbs.
For the smoothest lemon curd, the sweetener makes a huge difference! That’s why this recipe uses Besti Monk Fruit Allulose Blend. It dissolves effortlessly into the lemon curd, so it’s never gritty — with no added net carbs!

Ingredients You’ll Need

- Butter – Use unsalted.
- Lemons – You’ll need about 3-4 whole lemons, as we’re using both fresh lemon juice and zest.
- Egg Yolks – Using the yolks only gives this lemon curd a luxurious texture. Make sure they are at room temperature before you begin. Save the whites and make a keto lemon meringue pie or keto bread!
- Besti Monk Fruit Allulose Blend – The best way to have all the sweetness of sugar without the sugar and carbs. Unlike other sweeteners (including erythritol and other brands of monk fruit sweetener), Besti dissolves completely and won’t crystallize, which is why it’s the only one I recommend for this sugar free lemon curd recipe. It’s also fine to use Besti Powdered — both versions dissolve easily.
- Sea Salt – To balance the sweetness.

How To Make Keto Lemon Curd

- Melt butter. Add butter to a saucepan and melt over low heat, then remove from heat.
- Add remaining ingredients. Stir in lemon juice, egg yolks, Besti, lemon zest, and salt.


- Reduce. Return mixture to medium-low heat and whisk continuously until the sugar free lemon curd thickens.

Storage Instructions
- Store: Keep this sugar free lemon curd in the fridge for 1-2 weeks.
- Freeze: For long-term storage, keep lemon curd in the freezer for up to 1 year.

In a medium saucepan over low heat, melt the butter. Remove from heat.

0Hi Nancy, Sorry this recipe didn’t turn out as expected. The recipe only called for 1/4 tsp of salt so over 20 servings it should be that noticeable.

0All I have on hand is salted butter. Can I use that and not add the addition of sea salt? I also have allulose. Would that crystallize (monk fruit raises my bs)?

0Hi Sally, Yes, salted butter would be ok. If you are using another sweetener you’ll want to use my Keto Sweetener Guide to make sure you use the correct amount.

0Hi! I think I know what happened because it’s happened to me before! You must use a stainless steel saucepan or double broiler (or glass). Do NOT use aluminum or copper. 🙂 Look it up for more details.

0Is there a recipe for a CRISP Cookie? All that I find are actually soft style. I love lemon and would like a recipe for a low carb crisp lemon cookie. 0Hi Marcia, I don’t recommend stevia as it has an aftertaste. Also, pure stevia doesn’t have the bulk/volume that Besti does, and if you use a stevia blend, these typically don’t dissolve properly.

0Hi Maya! Appreciate the email today about Fruity keto recipes for spring and plan on making both the sorbet and lemon curd. May be a dumb question, but wondering if straining the seeds out (for diverticulosis) would change the macros from keto to low carb since I’d be removing fiber? Also, while I can figure out how to swap other berries, what would you suggest to make lemon or lime sorbet or sherbet. Thanks for all you do!!

0Hi Terra, Straining out seeds would remove fiber, but it would also remove the component of total carbs contributed by the fiber, so the net carbs should stay about the same. We haven’t experimented with a lemon or lime sorbet yet.
