I got strep last week. In the middle of July! What gives?! I’m grateful, though, because my husband and kids didn’t get it. And, I’m grateful that I had this easy chicken cordon bleu casserole in my freezer. It was a delicious, healthy dinner for my family that was ready to go when I wasn’t feeling well enough to cook.
Low carb freezer meals like this can be a total lifesaver. In particular, gluten-free casseroles are my favorite, because they can be a meal in just one dish. A couple others I make regularly are low carb cauliflower casserole with beef marinara and pesto chicken bake. The whole family loves them.
Even if you don’t have it prepared in advance, this low carb chicken cordon bleu casserole makes a simple and quick meal. You can never have too many of those!
The prep time is only ten minutes total. Then, just pop it in the oven and let it do all the work. (And if it’s too hot for the oven right now, just bookmark or pin this recipe for later!)
If you want to make this dish even simpler (…and lighter …and nut-free), you could skip the low carb Parmesan almond flour crumble topping. I really encourage you to include it if you can, though. It really makes this casserole special! You can even make more of it, if you want it to cover more of the top.
When I first came up with this recipe back in the spring, I was debating between making traditional chicken cordon bleu recipe or a chicken cordon bleu casserole. I’ll probably make both at some point, but opted for the casserole first. A casserole is much quicker than making individual portions of chicken.
The other reason I chose the casserole? I had a bunch of shredded chicken that I needed to use up. And I’m so glad I did, because this easy chicken cordon bleu casserole has become one of my favorite ways to use up pre-cooked or shredded chicken.
If you don’t have any cooked chicken on hand, you can quickly make shredded chicken in an Instant Pot. Otherwise, you could shred a rotisserie chicken from the store.
I might even use this low carb casserole recipe as a way to use up leftover turkey, after Thanksgiving later in the year! Yes, I’m thinking ahead a bit. That’s the thing about having a food blog – you’re always thinking to what you’ll be making next season.
For everyone else, you don’t have to think that far ahead to enjoy chicken cordon bleu casserole. Make it right away for a quick dinner – or if it’s too hot at the moment, assemble it and stick it in your freezer for an effortless meal later.
