I’m so grateful that I had this easy low carb chicken cordon bleu casserole in my freezer last week. Because I got strep – yes, in the middle of July. (What gives?!) And the keto chicken cordon bleu casserole totally saved me. It made a delicious, healthy family dinner that was ready to go when I wasn’t feeling well enough to cook.
Low carb freezer meals like this can be a lifesaver. In particular, keto casseroles are my favorite, because they can be a meal in just one dish. A couple others I make regularly are lazy cabbage roll casserole and keto cheeseburger casserole. The whole family loves them.
Even if you don’t have it prepared in advance, this low carb chicken cordon bleu casserole recipe makes a simple and quick meal. You can never have too many of those!
How To Make Chicken Cordon Bleu Casserole Low Carb
There are probably a million variations of chicken cordon bleu. Fortunately, making a keto low carb chicken cordon bleu casserole is super easy!
I originally posted my version in 2017, but didn’t like that it didn’t contain any vegetables. This made it unsuitable for a complete meal, since it still required a side dish.
Also, it had an almond flour crumble on top, which was supposed to be like bread crumbs. But, it didn’t actually turn out as crispy or bread-crumb-like as I had hoped.
This new, super easy chicken cordon bleu casserole recipe solves both of these problems, and it’s still low carb, keto and gluten-free.
The answer, as is often the case with low carb dinner recipes needing a starch replacement, is cauliflower! It makes the perfect, neutral tasting replacement for the typical rice or potatoes found in heavy, high-carb casseroles.
In addition, the sauce in this shredded chicken cordon bleu casserole doesn’t have any starch, roux, or thickener. Sour cream, cheese and Dijon mustard make it thick, creamy and delicious all on their own.

As for the bread crumb topping problem? Just use crushed pork rinds! They are ultra crispy, and replace bread crumbs beautifully on top of a casserole.

You can totally skip the optional topping if you want to for simplicity, but I really encourage you to include it if you can. It really makes this easy chicken cordon bleu casserole recipe special! You can even make more of it, if you want it to cover more of the top.

How To Store Keto Chicken Cordon Bleu Casserole
Keto chicken cordon bleu casserole is an easy meal to make ahead, whether you want it a few days, weeks, or months ahead of time.
Can You Freeze Chicken Cordon Bleu Casserole?
Yes, you can freeze chicken cordon bleu casserole! You may have heard that sour cream does not freeze well – and this is true.
Fortunately, you can freeze shredded chicken cordon bleu casserole. This is because we mix the sour cream with other ingredients for the sauce, which helps stabilize it. It might not be identical to making it fresh, but still very good.
To freeze low carb chicken cordon bleu casserole, complete all the steps except the last, final baking step. The casserole may still be warm from cooking the cauliflower or shredded chicken, so let it cool to room temperature. Once cooled, wrap tightly with foil, flush against the top to remove air, and place in the freezer.
To bake a freezer chicken cordon bleu casserole, you can either let it thaw first and then bake, or bake from frozen. If you bake it from frozen, you may need to tent the top with foil to prevent the cheese from burning before the center is hot.
Can I Make Chicken Cordon Bleu Casserole Ahead of Time?
Yep, you can make chicken cordon bleu casserole ahead! In fact, I usually do.
Simply assemble the shredded chicken cordon bleu casserole, but don’t do the final baking step. Place it in the fridge, covered.
Once ready to serve, uncover and place in the oven until the casserole is hot and cheese is melted.
Other options include meal prep or leftovers. Either way, keto chicken cordon bleu casserole reheats well. You can pre-make it (including final baking), and then reheat individual portions either in the microwave or oven as needed.
If you don’t have any cooked chicken on hand, you can quickly make shredded chicken in an Instant Pot. Otherwise, you could shred a rotisserie chicken from the store.
I might even use this low carb chicken cordon bleu casserole as a way to use up leftover turkey, after Thanksgiving later in the year! Yes, I’m thinking ahead a bit. That’s the thing about having a food blog – you’re always thinking to what you’ll be making next season.
For everyone else, you don’t have to think that far ahead to enjoy an easy chicken cordon bleu casserole recipe. Make it right away for a quick dinner – or if it’s too hot at the moment, assemble it and stick it in your freezer for an effortless meal later.

- 1 head Cauliflower (cut into florets)
- 1/4 cup Avocado oil
- Sea salt
- Black pepper
- 1/3 cup Heavy cream
- 1/2 cup Sour cream
- 2 tbsp Dijon mustard
- 2 cloves Garlic (minced)
- 1 1/2 lb Shredded chicken (cooked, weight after cooking)
- 12 oz Ham (deli slices, chopped)
- 2 cups Swiss cheese (shredded, divided)
- 1/4 cup Pork rinds (optional; crushed like bread crumbs and measured after crushing)
- Chives (chopped, for garnish - optional)

Preheat the oven to 450 degrees F (232 degrees C).
In a large bowl, toss the cauliflower with oil. Season with sea salt and black pepper.
Arrange the cauliflower on a baking sheet. Roast in the oven for about 30 minutes, until golden on the edges.
Meanwhile, in a large bowl, stir together cream, sour cream, Dijon mustard, minced garlic, and half of the shredded cheese (1 cup). Stir in the chicken and ham.
When the cauliflower is done, take it out of the oven and reduce the oven temperature to 400 degrees F (204 degrees C). Stir the cauliflower into the bowl.
Transfer the casserole mixture into a 9x13 in (23x33 cm) casserole dish. Top with remaining shredded Swiss cheese (1 cup). If desired, sprinkle crushed pork rinds on top for a bread-crumb-like effect (optional).
Bake for 10 minutes, until the cheese is melted and golden, and the casserole is bubbly. Garnish with fresh chives (optional).
Serving size: 1 cup, or 1/12 of entire pan
If you are looking for an older version of this recipe without cauliflower, you can make it without cauliflower and reduce the amount of sauce a bit.
