One of my favorite ways to incorporate veggies into recipes is to use them as a vehicle for various toppings. Eggplant is a great option for this, because it makes a pretty neutral base that can mold into whatever flavor profile you add to it. Low carb eggplant pizza, anyone?
These cute little eggplant pizzas are such a delicious way to enjoy eggplant. Not only are they low carb and gluten-free, they’re also a mouthwatering dish that packs your life with veggies. (And, in my case, one that packs my daughter with veggies.)
It comes as no surprise that this low carb eggplant pizza recipe is a pretty versatile slate that you can fill the way you see fit. I omitted marinara sauce to let the garlic flavor shine through, but you can add it in if you’re big fan of it. Since these pizzas are Margherita style, they are a great lunch or dinner option for those that do Meatless Mondays, or as a veggie side dish whenever. Otherwise, making them a complete meal is easy enough by adding whatever meat toppings you like. You can even serve them as an appetizer.
Another advantage of these low carb eggplant pizzas is that most of the prep can be done ahead of time. (What can I say? I’m a planner.) I’m always looking for quick and easy recipes that I can make for my family in advance, and these totally fit the bill. You can complete all the steps up to a few days ahead, and just execute the last two steps (broiling and adding basil ribbons) right before serving.
I haven’t tried freezing these eggplant pizzas, but I’m confident that they are a great candidate for that, as well. The key is to finish the first part of the cooking process before freezing, so that enzymes in the veggies are deactivated prior to. Again, just finish all the steps except the last two, then freeze. You can thaw them in the oven whenever you’re ready for them. How awesome is it going to be to have these comforting pizzas in the middle of winter?
Okay, let’s not think about winter just yet. I’m not ready! Let’s talk summer. You can totally make these healthy eggplant pizzas on the grill! Just replace the oven steps (three and seven) in the recipe with grilling instead, and watch for the noted markers of doneness at each step.
