I made a dill pickle ham roll ups recipe from my friend, Lindsay from Veggie Balance, for the first time last week. All I can say is, why didn’t I do this sooner? They were delicious, simple as can be, and my whole family loved them.
Lindsay calls these “Ham, Cream Cheese, and Dill Pickle Roll Ups”. The recipe came from her upcoming cookbook, The Easy Gluten-Free Cookbook. Needless to say, the name of the book piqued my interest right away! And, I was honored to get a sneak peek.
Between two kids and two jobs, I don’t have much time for cooking. A lot of the food my family eats is recipes being tested for the blog. Everything else has to be quick and easy. (Actually, even the blog recipes have to be quick and easy, too! Check out these easy cheese crisps!)
So far, I absolutely loveThe Easy Gluten-Free Cookbook. It’s so beautiful and well organized, with sections for various courses. From salads, snacks, and breakfast, to main dishes, sweet treats, and condiments, you’ll find a little bit of everything. Each recipe has step-by-step instructions, tips for variations or other dietary restrictions, and even nutrition info.
All the recipes in the book are not only gluten-free, they are also simple to make, using common ingredients! In addition to the pickle ham roll ups, some others I really like include mason jar taco salad, jalapeno poppers, tuna stuffed avocado melts, and flourless double chocolate chip cookies.
Not all the recipes in the cookbook are low carb, but I still think it’s a great resource even if you are. It’s actually really easy to substitute a sugar-free sweetener in place of sugar or cauliflower in place of potatoes. I’ve also found it handy for making healthy recipes for my whole family, because my kids sometimes need more (real food) carbs than I eat myself.
Since I was excited to make something quick from the cookbook right away, I flipped to the Simple Sides and Snacks section first. The dill pickle ham roll ups jumped out at me immediately! I even had the ingredients at home, so I didn’t have to go buy anything to make them. (Insert happy dance!)
I actually made these ham and pickle roll ups for the first time as I was practically on my way out the door for a girls’ night out. My husband was staying home with the girls and I wanted to leave them with some healthy snacks in addition to dinner. I had to resist eating half the batch as I was making them!
The ham roll ups were all gone by the time I got home. My husband and two-year-old both loved them! I barely got to enjoy any since I was heading out, so I’m making another batch today already.
Clearly, ham cream cheese pickle roll ups make an awesome snack. The empty plate I returned to was proof! I bet they’ll make a perfect after-school snack for when my kids head to school in a few years, too. Or a work snack for me this week. Or even a weekend snack. Why not?
I’m thinking about making these easy dill pickle roll ups again for Labor Day. Being bite size, they look like an ideal party appetizer for a crowd! Our plans are pretty last-minute this year, but I’m sure we’ll have some place to bring them. 😉
I’m always on the hunt for cold appetizers and snacks that you can prepare in advance, so that there’s less stress at the last minute. Some of my other favorites are Mexican deviled eggs, Caprese salad skewers with bacon and cold crab dip. Now I’ll be making ham and pickle roll ups along with them!

Spread 1 tablespoon (14 g) of cream cheese on each slice of ham.
- Place a pickle and scallion at one end of each ham slice and roll it up into a tube shape.
- Cut each roll-up into 4 pieces. Secure with toothpicks, if desired.

After I made these dill pickle roll ups, I noticed that Lindsay's recipe uses (sliced) pickle spears, whereas I used whole pickles. They are delicious either way!
Serving size: 1/4 of entire recipe, or ~6 roll ups
