For the perfect waffle consistency, these chocolate chaffles with cream cheese frosting rely on the right blend of keto flours and sweeteners. Wholesome Yum Almond Flour and Psyllium Husk Powder allow the batter to stay crisp and airy like real waffles, while Besti Monk Fruit Allulose Blend creates layers of sweetness in every bite, with the perfect texture and no aftertaste.

Ingredients You’ll Need
This section explains how to choose the best ingredients for chocolate chaffles, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.
For the chocolate waffles:
- Wholesome Yum Almond Flour – Adds body to the waffle batter, without the grittiness of other almond flours (this one is the finest consistency out there!). You can also substitute 2 teaspoons of coconut flour.
- Besti Monk Fruit Allulose Blend – Creates a sweet flavor that mixes easily into the batter. You can also substitute erythritol or another keto sweetener, but the texture may be grittier.
- Wholesome Yum Psyllium Husk Powder – Helps the chocolate chaffle be a bit chewy… like real waffles! Plus, it adds a natural boost of fiber, and mine won’t turn baked goods purple like some other brands do.
- Shredded Mozzarella Cheese – This cheese has the best flavor profile (read: neutral) for oreo chaffles, and helps them get crispy.
- Egg – Use a whole, large egg. A flax egg may also work.
- Butter – Adds moisture to the batter. You can also use coconut oil instead.
- Unsweetened Cocoa Powder – Creates a rich, chocolaty flavor. Use the best quality one you can.
- Vanilla Extract – Enhances the sweetness.
- Baking Powder – Helps the oreo chaffle rise.
For the cream cheese frosting:
- Besti Powdered Monk Fruit Allulose Blend – This confectioners-style sweetener creates a smooth, sweet, and fluffy frosting.
- Cream Cheese – For the most keto-friendly chocolate chaffle, choose a full-fat variety.
- Vanilla Extract
- Heavy Cream – Coconut cream will also work.

How To Make Chocolate Chaffles With Cream Cheese
This section shows how to make oreo chaffles, with step-by-step photos and details about the technique, to help you visualize it. For full instructions, including amounts and temperatures, see the recipe card below.
- Preheat. Do this first, so that the waffle iron has time to heat up.
- Make batter. In a medium bowl, combine shredded mozzarella, egg, Wholesome Yum Almond Flour, Wholesome Yum Psyllium Husk Powder, Besti, and baking powder, butter, cocoa powder, and vanilla. Stir or whisk until smooth.

- Cook. Pour 1/4 cup of the batter into a 4-inch waffle maker and cook until crispy. Carefully remove the chaffle from the waffle maker and set aside to crisp up. Repeat with remaining batter.

- Make frosting. Meanwhile, use this cream cheese frosting recipe to make the filling.
- Assemble . Spread frosting onto one chaffle and top with another. Garnish with sugar free whipped cream or sugar-free chocolate chips, if you like.
TIP: This recipe makes two servings. These waffles are very filling! You can cut the sandwich in half to serve if you want to have just one serving.

Frequently Asked Questions
How many carbs in chocolate chaffles?
This chocolate chaffle recipe with almond flour has just 4 grams net carbs per serving. It’s very filling, so that’s actually half the recipe, or half of a whole chaffle sandwich.
Can I use a different sweetener?
Yes, you can. You’ll need:
- Granulated sweetener for the chaffles – like crystallized allulose, crystallized monk fruit, or granulated erythritol
- Powdered sweetener for the frosting – like powdered allulose, powdered monk fruit, or powdered erythritol
Can I use a different flour?
Yes. You can use either almond flour (make sure it’s blanched almond flour like this) or coconut flour.
Note that you need 1/3 the amount of coconut flour compared to almond flour. For 2 chocolate chaffles, that’s 2 tablespoons almond flour OR 2 teaspoons coconut flour.

0I make this recipe at least once a week !!! They’re delicious 😋😋
Robert
0This tasted delicious… I’m not sure if I paid 100% attention tion to “sugar free”, especially when dealing with things like cocoa powder – I used the (as far as I know) most popular Hersey’s (and I don’t think it was anything special, again, like “sugar free” just plain old generic Hersey’s cocoa powder). I did use a sugar alternative sweetener and almond flour, so I think the cocoa powder is probably the only thing that I am questioning, and if there isn’t a special “no sugar” edition than the recipe does not taste 1 buy sugar free which is a wonderful surprise for guys like me who has hated all diet-like substitute (diet soda, etc)

0Made this tonight after dinner. It is so good I felt guilty eating it!
Dany
0Hi.
This looks delicious and I will have to try it.
But I noticed that the frosting recipe you linked to has butter in it, but you don’t list it here in the frosting ingredients. Is that on purpose because it’s not needed here or should the butter be used like in the original frosting recipe?
Wholesome Yum A
0Hi Dany, you’re correct that the frosting recipe here doesn’t use the butter — however, the method for blending it together is the same as the recipe linked in the card.
Emilian
0Not good
Wholesome Yum D

0Instead of making Chaffles, could I use the same recipe to make pancakes instead? I don’t have a waffle iron and would not buy one just for this recipe.
Wholesome Yum D
0Hi LM, I have never done this but I know others have had success making pancakes instead of waffles.
Sil

Wholesome Yum D
0Hi Sil, Psyllium Husk Powder makes your favorite recipes more chewy or pliable texture. You can find more information here.
Brandi
0Unflavored Metamucil is psyllium husk if that helps. You can usually find it in the pharmacy section of the store.
