And, when I don’t have time to make my favorite keto bread or even use my keto bread mix, this 90 second keto bread recipe comes to the rescue. It’s quick, simple, and so satisfying when I’m in a hurry.

Ingredients & Substitutions
This section explains how to choose the best ingredients for keto mug bread, what each one does in the recipe, and substitution options. For measurements, see the recipe card below.
- Butter – Provides moisture and flavor, and prevents the bread from being dry. You can also use coconut oil or ghee for a dairy-free or paleo version, respectively.
- Almond Flour – Wholesome Yum Blanched Almond Flour is the main ingredient, instead of white flour. This brand has the finest grind and is blanched for the best texture in bread, pancakes, muffins, cookies, crackers, and more. Many other brands are too coarse and leave a gritty texture. If you need a nut free version, try my cloud bread instead. Keep in mind that coconut flour does not work as a 1-to-1 substitute, so if you want to use coconut flour, your best bet is to follow the coconut flour microwave bread recipe in the Wholesome Yum app.
- Psyllium Husk Powder – This is the key to making this keto 90 second bread chewy and sturdy with air pockets, giving it a texture that’s like real wheat bread. As a bonus, it adds fiber! I don’t recommend omitting it because it’s important for texture, but you can substitute flax seed meal for a similar effect.
- Baking Powder – To help the bread rise! Don’t confuse this with baking soda, which is different and will leave an aftertaste here.
- Sea Salt – Just a pinch of salt to balance the flavors.
- Egg – This acts as a binder and also helps with lift. For the right batter ratio, use a large egg for this low carb microwave bread. You can also use a flax egg or other egg substitute, but the bread will be a little more fragile and less airy with those. Some people make this type of bread with only egg whites, but I recommend including the yolk because the bread turns out more rubbery using only whites.
VARIATION: Add herbs or spices!
Garlic powder, Italian seasoning, fresh herbs, or even a tablespoon of parmesan cheese can make nice additions.
How To Make 90 Second Keto Bread
This section shows how to make keto 90 second bread, with step-by-step photos and details about the technique, to help you visualize it. For full instructions, including amounts and temperatures, see the recipe card below.
- Melt butter. In a small glass rectangular container (this one is the perfect size) in the microwave, melt the butter. (You can also melt on the stovetop if you prefer.)
- Mix dry ingredients. In a small bowl, stir together the almond flour, psyllium husk powder, baking powder, and sea salt. (You can also stir them directly into the melted butter, but they mix better if you whisk separately first.)
- Combine. Add the flour mixture to the melted butter, whisk in the egg, and stir everything together until smooth. Level the top with the back of a spoon.
- Cook. Zap it in the microwave or bake in the oven, until the bread is firm and an inserted toothpick comes out clean.
- Slice. Run a knife along the edges, then flip onto a plate or paper towel to release. Cut the rectangle in half crosswise to form two (almost) square, thick slices.
TIP: Toast it for even better texture!
I highly recommend toasting your bread in the toaster. This improves texture and reduces any eggy flavor.
Storage Instructions
You can keep 90 second bread on the counter for about a day, in the fridge for about a week, or freeze it for up to 3-6 months.
Ways To Use 90 Second Keto Bread
You can use 90 second bread in all the same ways that you’d normally enjoy bread! Here are some ideas:
- Sandwiches – This is my favorite way to use keto 90 second bread. It’s so quick! My go-to lunch is a turkey sandwich with lettuce and homemade avocado oil mayo. But you can also make other sandwiches like a classic keto BLT, a simple keto grilled cheese, a delicious low carb reuben, or even keto peanut butter and jelly.
- Spread – This bread is delicious smeared with some grass-fed butter, nut butter, or even chia jam or sugar-free jelly. You could also toast it, slather with butter, and add a sprinkle of cinnamon for a sweet treat.
- Avocado toast – If you like to freeze avocados like I do, spreading the mashed avocado on the bread is delicious and a great way to use them. Of course, you can do the same with fresh avocado.
- Breakfast – Try a breakfast sandwich with egg, cheddar cheese, and either sausage or bacon.

0I was so happy to find something to make a sandwich. Being a diabetic it was the bread I missed the most. This was very good, and very easy. Always appreciate the comments and helpful hints of others but is good as is. I baked it in the oven and just lightly toasted before making my sandwich. 0Thanks for this quick microwave recipe, I just finished having sunny side up eggs with toast for the first time in 3 months! I only like non-scrambled eggs with toasted bread and this recipe did the trick…not real bread toast of course but, it was close enough so a keeper. Think it will be better and look more like pics here next time with baking powder that isn’t 4 years expired (didn’t notice that part until logging recipe into fitnesspal lol).

0I really like this bread. I modify it a bit by replacing 1 1/2 of almond flour by 1 1/2 of flax meal. The texture is great. Also I toast it in the pan that I’m cooking my eggs in, super easy.

0This was a great recipe! Super easy, and my husband said it satisfied his craving for bread. I put it in a ramekin, so that it came out like an English muffin. Worked fine at 90 seconds. One note: ghee is clarified butter. So you should revise your ingredients direction above, as ghee is NOT a dairy-free option. (Some people don’t know that, would not want them to have an allergic reaction.)

0This recipe is awesome. I use it all the time, and add all kinds of things. Parmesan cheese, chopped up olives, sun dried tomatoes, garlic powder, rosemary or any herb you like. Not all at once of course! It is soooo quick, and I always toast it!

0Like you say on your show, I am a foodie and detest it when recipes on websites turn out tasting bleh. This bread has a great texture. After making it a few times plain now, I added some sesame seeds to the batter and that turned out great too. I make an open-faced breakfast sandwich with a slice of this almond flour bread, plenty of cream cheese, and scrambled eggs. Paired with coffee. So tasty, that I can t tell it isn t a regular scrumptious egg sandwich. Love this quick recipe. After the first time, I thought it needed a little *umpff *. So today I added dehydrated onion and parsley. It was really delicious. I spread avocado on it and had a microwaved poached egg with cheese sauce for breakfast.

0What is Psyllium husk powder? I’ve looked it up to add to my shopping list at Walmart and it takes me to a sugar free fiber supplement. Keto is all new to me so please excuse my ignorance lol

0Hi Tammy, You don’t really want the common fiber supplement. It often contains flavoring and sugar, which we don’t want in the keto diet. I suggest trying this one.

0I just made these tonight for supper and they turned out pretty good (baked in oven). Only thing is, they stuck to the bottom of the dish – I had to pry them out with a mini spatula. Any thoughts on what went wrong? I made 3 individual ones, measuring and mixing each one separately.

0Hi Jennifer, Did you grease the dishes that they were baked in? For some reason the baking process in the oven causes a bit more “stickage” than when cooked in the microwave.

0Didn’t have psyllium husk powder so ground flax seed instead. Let it soak with the egg mixture while oven preheated. Good taste overall! But I wish I’d greased the pan. I thought it would be OK because of the butter in the mixture but it wasn’t enough, I had to scrape it out.

0Made this a couple of days ago. Easy. My rectangular dish was a too big so it was very flat – probably also due to me leaving out the psyllium husk powder because I didn’t have that. Didn’t taste like any bread I ever had but I like it. Toasted it and it held up well making a chicken salad sandwich one day and a fish sandwich another day. The calories and fat bother me some but it’s not like I’ll be eating it every day. Thanks for the recipe.

0I aim to follow a mostly-Paleo way of eating. Do you have a substitution recommendation for the psyllium husk powder? It is only 1 tsp and therefore not a huge deal-breaker, but after doing some quick research this ingredient is not recommended by the Paleo community. Thank you!!

0Great recipe. My first ever low carb bread anything. I made this without the psyllium husk powder, just because I didn’t have any. Also, made it all in one small bowl. First, melted the butter, added the pinch of salt, and whisked, then added the egg and whisked some more. Then the baking power and almond flour, and whisked all together. And microwaved for 90 seconds. After that there are any number of directions to go. I decided on a pancake and plopped the whole thing into a frying pan and lightly browned both sides and topped with Walden Farms no calories, no carb, no anything strawberry syrup. Was wonderful.
