We moved to a new office building at work last week. My new cube has a window a few feet away, with a view of a bubbling creek and lush blooming greenery. I love it. Such a timely reminder of spring has me craving fresh, fruity breakfasts. Of course, they have to be quick for me to throw them together the night before. Like an apple sandwich?
These blueberry pistachio apple sandwiches are low in carbs and have just four natural ingredients. They require no cooking, take just a few minutes to assemble, and still taste great later if you prepare them in advance. The sweetness of the blueberries contrasts wonderfully with the tart Granny Smith apples and crunchy pistachios.
Of course, the creamy almond butter is the most important part, because… Nut Butter. Need I say more? Don’t worry if you’re nut-free though – you can make these with sunflower seed butter, too. Another fun way to change it up is to use a flavored nut butter; Barney Almond Butter Espresso and Vanilla is one of my favorites. Either way, these taste so good that you’ll feel like you’re eating dessert, all while getting plenty of vitamins, fiber, and healthy fats.
