This Stuffed Avocado Is One Of My Easiest Lunch Shortcuts

Stuffed avocado is one of my favorite lunches. It’s so easy to change up and tastes fresh and flavorful, so I lean on this method all the time to use up random ingredients I have on hand. Mash some creamy avocado, fold with savory fillings, stuff it all into the shells, and you’ve got an easy meal you can feel good about. Today I’m sharing the version I make most often — here’s why:
- BLT flavor in every bite – The mashed avocado is the best creamy contrast to the crisp bacon, juicy tomatoes, and crunchy romaine. If you love BLT sandwiches (or my BLT salad!), this recipe is all the best parts tucked into an avocado shell.
- Quick and easy – If you’ve got cooked bacon on hand, this recipe requires zero cooking. And it takes me 15 minutes or less to throw it together.
- Healthy lunch idea – With fresh, simple ingredients, my stuffed avocado is packed with fresh produce, lots of fiber (over 14 grams per serving!), healthy fats, and even some protein.
- 10 filling variations – While this BLT version is my absolute favorite, I’ve included 10 more of my favorite stuffed avocado recipes below. Keep these variations on rotation and you’ll never get bored!
If you want a quick lunch that gives you creamy, crunchy, salty, fresh, and feel-good vibes all at once, this stuffed avocado is it. Make it with me!

“Loved this recipe. Took like literally 5 mins to throw it all together. I used already cooked bacon instead so that probably cut down the time. I just have to remember to double the recipe next time.”

Ingredients & Substitutions
Here I explain the best ingredients for my stuffed avocado recipe, what each one does, and substitution options. For measurements, see the recipe card.
- Avocados – I prefer Hass avocados, but other types are just fine. Medium to large ones work best, because very small ones don’t have much room for filling.
- Bacon – Crisp bacon is key here, because it gives the filling the best BLT texture. I cook it in a skillet for this recipe, but you can also meal prep larger batches of bacon in the oven or microwave bacon.
- Tomatoes – I like grape tomatoes or cherry tomatoes here, because they’re sweet and not too watery. If you use a larger tomato, make sure you seed it first, so the stuffed avocado filling doesn’t get runny.
- Romaine Lettuce – Romaine gives the most classic BLT crunch, but feel free to substitute a different lettuce or really any greens. If you use softer greens, I recommmend adding a little diced red onion for some crunch.
- Lime Juice – This brightens the rich avocado and helps slow browning. Lemon juice works, too.
- Garlic Powder – I recommend garlic powder over fresh garlic here, because it blends into the mashed avocado more evenly.
- Sea Salt, & Black Pepper – Salt lightly at first, because the bacon adds salt, too.

How To Make Stuffed Avocado
I have step-by-step photos here to help you visualize the recipe. For full instructions with amounts and temperatures, see the recipe card.
- Cook the bacon. Place the bacon in a cold skillet and cook over medium-low heat, flipping now and then, until crisp. Starting cold helps render the fat slowly, so the bacon gets crunchy instead of scorching on the edges.
- Prep the avocados. Halve the avocados, remove each pit, and scoop most of the flesh into a bowl.

- Mash with lime juice, garlic powder, salt, and pepper. I like to leave it a little chunky, which makes for a better texture.
- Fold in the BLT ingredients. Stir in the tomatoes, romaine, and chopped bacon just until coated. I fold gently here, so the lettuce stays crisp and the tomatoes don’t release too much juice.
- Stuff and serve. Spoon the filling back into the avocado halves, mounding it a little on top. Serve the stuffed avocado right away, while it’s still bright green and the bacon is crisp. I like a little extra fresh cracked pepper on top!

My Recipe Tips
- Use ripe avocados, but not mushy ones. They should give just a little when pressed, so they’re soft enough to mash, but not so soft that the shell can’t hold up when scooped out. (Save those extra-soft ones for my guacamole recipe instead.)
- Use a melon baller or small spoon for the cleanest avocado shells. It gives me better control than a larger one. An avocado slicer works, too, if you want one tool for cutting, pitting, and scooping.
- Leave a border when you scoop. I leave a 3/8 to 1/4-inch border around the skin, which helps keep the avocado halves sturdy enough to hold the filling.
- To avoid a watery filling, ensure the mix-ins aren’t too wet. Dry any fresh produce (lettuce and tomatoes in this version), or you can even cut out very watery areas (like seeds from larger tomatoes). Don’t forget to check for excess moisture if you make one of my other filling options, too!
- Keep the mashed avocado a little chunky. I think the texture is much better that way.
- Taste before stuffing. Avocados vary a lot in size, so the filling might need more salt or acid (lemon/lime juice) once it’s mixed.
- Don’t forget to scrape the edges when eating. I always eat stuffed avocados with a spoon, so that I can get every last bit still attached to the shell.
- Have extra filling? Depending on avocado size, it doesn’t always all fit back in the shell. I usually just eat any extra right from the bowl, but you can also stuff it into lettuce wraps or make a sandwich.
- Want extra protein? Lately I’ve been folding in leftover baked chicken breast for an extra protein boost.

Instructions

-
Place bacon onto a skillet while the skillet is still cold. Cook the bacon over medium heat, flipping occasionally, for about 5-6 minutes, until crispy. Drain on paper towels (it will crisp up more as it cools).
-
Meanwhile, slice the avocados in half and remove the pits. Scoop half of the flesh out of each avocado half (leave half undisturbed) and transfer to a bowl.
-
Add the lime juice, garlic, powder, and sea salt to the avocado. Mash with a fork. Adjust seasonings to taste if desired.
-
Fold in the grape tomatoes and lettuce.
-
When the bacon slices are cool enough to handle, chop them up and add them to the bowl.
-
Scoop the mixture back into the avocado halves. If desired, add fresh cracked pepper on top.

Maya’s Recipe Notes
Serving size: 2 avocado halves with filling
- Tips: Check out my recipe tips above to help you get the best texture and make these stuffed avocados as easy as possible.
- More fillings: I’ve included 10 more stuffed avocado recipes below!
- Storage: This recipe is best fresh. If you have leftovers, drizzle the exposed avocado with extra lime juice, press plastic wrap against the surface, and refrigerate for 1 day. I don’t recommend freezing.
- Meal prep: You can cook the bacon, chop the romaine, and halve the tomatoes in advance. Wait to cut and mash the avocado until right before serving, because it’ll brown quickly.

10 More Stuffed Avocado Recipes
The BLT version above is the one I make most, but I see stuffed avocado as more of a formula than a strict recipe. Before I get to the 10 other fillings I love, I want to share the guidelines I use to make almost any filling work (in addition to my tips above!):
- The best stuffed avocado recipes have a little balance – Creamy avocado, a filling with enough protein or texture to feel satisfying, something crisp or juicy, a little acid so it doesn’t taste flat, and a salty finish.
- Keep the pieces small – Dice or chop the filling ingredients small enough that you get avocado and filling in the same bite. Big pieces tend to fall out of the shell.
- Watch cold vs. warm fillings – Cold fillings are the easiest, but warm fillings work, too. Just let them cool for a few minutes first, so they don’t make the avocado too soft.
Here are my favorite filling ideas:
- Crab – Fill the avocado halves with cold crab dip or crab salad, then top with chives. I like this one chilled, so try to make the dip or salad in advance.
- Shrimp – Use chopped cooked shrimp, diced tomatoes, bell peppers, chives, and a drizzle of spicy mayo. Both grilled shrimp and sauteed shrimp work well.
- Egg – Make my baked avocado eggs for breakfast, or spoon egg salad into avocado halves for lunch. A little hot sauce on top cuts the richness nicely.
- Caprese – This version has diced tomatoes, fresh mozzarella, basil, olive oil, salt, pepper, and a drizzle of balsamic glaze. For exact amounts, search “Caprese stuffed avocado” in the Wholesome Yum app on iPhone or Android.
- Chicken – Spoon in my classic chicken salad, avocado chicken salad, or Mediterranean chicken salad. For a warm version, use diced cooked chicken and vegetables, add cheese, and bake just until the cheese melts.
- Tuna – My avocado tuna salad is a natural fit, but tuna egg salad or regular tuna salad works, too. I like extra lime juice with tuna because it keeps the filling from tasting heavy.
- Taco – I loved this version so much that it’s on the cover of my Easy Keto Cookbook! You’ll find my exact version there, but feel free to make my taco meat recipe and just load it up with your favorite toppings.
- Slaw – Add creamy coleslaw or cilantro lime slaw to the avocado halves. For a heartier meal, mix in my pulled pork.
- Mediterranean – Mix chicken or shrimp with diced tomatoes, chickpeas, bell peppers, cucumbers, olives, feta, olive oil, lemon juice, salt, and pepper.
- Salsa – Spoon in a chunky salsa, or try pineapple salsa for a sweet-savory filling. I like salsa fillings best when they are thick and chunky, so they do not run out of the avocado shell.

0Outstanding recipe! Great flavors, relatively healthy, and very easy to make. Made some changes based on my taste preferences, nutritional needs, & what was on hand to use. Subbed spinach for lettuce & added chopped hard boiled egg. Used ranch dressing to add another flavor dimension. Taste: #9/10. Spiciness: #0/10. Definitely will make again!

0Hi Beverly, I have a honey mustard recipe here.

0I love this ? recipe. Quick, easy, healthy, delicious. I oven roast a package of bacon to use during the week. Makes prep of this even faster. Sometimes for dinner will add shredded chicken. A versatile recipe, thanks!

0Trying a keto diet, never noticed the serving size and accidentally ate four servings. Delicious!

0This is a fun idea, but I doubt that I will make it again. It didn’t help that I had a not good avocado. The bottm line is that for me this is a lot of work for not much nutrition, even with a good avocado. I chose to serve it with cheese toasts (on a homemade keto flat bread), so we’d have what I consder to be a real meal. I had been really looking forward to these because I love all the ingredients & the combo thereof, so I wish it worked better for me.

0Just had these for dinner and my husband and I love these wonderful avocado BLTS. Thank you for the recipe!

0This is a great recipe – quick and easy to put together, yet tasty and filling! As I only use half of an avocado, I cover the fleshy part of the other half with a drop of coconut oil and store it in an airtight container – the oil “hardens” in the fridge which creates a barrier that stops the avocado going brown.
Donna
0This is a great recipe! I halved the recipe, scooped out the entire avocado, and put everything in a bowl. This is a healthy, and filling, lunch.
Samantha
0Loved this. *I used fresh garlic and added some onion and cayenne. Pretty enough for company with a little cilantro on top. Thanks!
Tammy
0Not a big fan of avocado, but I know they are good for me so I try to incorporate them into my eating plan. I really enjoyed this recipe, thank you!

0Where is the mayo? I would totally make this because it will be delicious but to make it even more keto, I will be mixing in a bit of mayo too! 🙂
Georgina
0Thank you for sharing, I am an Avocado virgin and look forward to trying this recipe x
Sylvia
0Is there anyway this could be made in advance so I can bring it to lunch. Thanks.
Wholesome Yum M
0Hi Sylvia, Be sure to cover the avocado with lime juice and then tightly seal. It should work out well for a portable lunch.
Debbie Lykins
0Made these tonight for me and my granddaughter and we absolutely loved them.
I will definitely be making this again, but next time I will scoop out all the avocado and quarter my tomatoes. Just our preference.
