I’ve found my new dinner obsession – juicy baked chicken breast with Italian seasoning. Not just any old version of it, but this super crazy, can’t-even-believe-it’s-lean-chicken-breast recipe. I am seriously addicted to it. If you’ve ever thought that baked chicken breast tends to turn out dry, this preparation will totally change your mind.
There are three key parts to making your baked chicken breast the juiciest ever:
1. Brine the chicken.
This is the most important step for juicy baked chicken breast, if I had to pick just one. Soaking the chicken in salt water allows it to absorb a ton of moisture and stay juicy.
The crazy part is that the brining process imparts so much moisture that you can even freeze it and then microwave to thaw, and it will still be juicy! Of course, that’s not the preferred method. The microwave does dry it out a bit. It’s definitely better to reheat it in the oven, but if you don’t have the time then the microwave won’t ruin it (unlike your typical chicken breast). I pretty much make this chicken every week now, allowing me to have nights when I spend some time making a cool side dish and don’t have to worry about the main course whatsoever.
2. Brush or spray the chicken with a healthy fat, and season liberally.
Adding a healthy fat gives the chicken more flavor, so this is a must! Even better, it helps seal in the moisture imparted from the first step. I like to use olive oil (regular, which has a higher smoke point than extra virgin) or avocado oil. You could use ghee or butter if you prefer.
An Italian seasoning blend, along with salt and pepper, is my favorite seasoning combination for this juicy baked chicken breast at the moment. This is what I used in the recipe below. You can totally get creative here, though. Various seasonings can totally transform the chicken, so feel free to get creative and add whatever your little heart desires!
3. Bake the chicken in the oven under high heat.
This is just a personal preference. Baking at high heat means the cooking time is shorter, and I do find that it contributes to the moisture in the chicken, too. I bake my chicken for about 16 minutes at 450 degrees Fahrenheit. This is the perfect amount of time in my oven, but it will be a little different for everyone. The exact time depends on the thickness of the chicken pieces and a little bit on oven variations. You can bake it for longer at 350 or 400 degrees instead if you prefer; you’ll want to do that if you choose to use an oil with a lower smoke point, like extra virgin olive oil.
There you have it. I feel like there should be more steps to this juicy baked chicken breast recipe. it’s just so good! But, it’s actually that simple. That just means there is no excuse not to try it, no matter how busy you are!
